Thanks Tahli, my sister is sugar/gluten free, and her daughter is dairy free...so, anything I bake for the family has to be dairy, gluten sugar free....challenging!

I think I'd make a really small batch and see if it worked...hard to say without seeing your cheesecake recipe, ie, what function the condensed milk performs in the recipe

Substitute for sweetened condensed milk

2 eggs
1 c. brown sugar
1 tsp. vanilla
2 tbsp. flour
1/2 tsp. baking powder
1/4 tsp. salt.

Mix all ingredients and use as a substitute for sweetened condensed milk in all cooked recipes. I...
