Triple-Vanilla Baked Cheesecake
I mentioned this in a recent post and the recipe has been requested so here it is. No crust, lots of protein and not a lot of sugar. I haven't tried it because I'm not on maintenance yet but you can bet I'll be baking it as soon as a finish refeed!
1 vanilla bean 500g cream cheese 1kg ricotta 2 eggs 1 cup Greek-style yoghurt 1/2 cup vanilla sugar 1 tsp vanilla essence 2 TBS cornflour 2 TBS plain flour 60g butter, melted, cooled Preheat the oven to 150 C. Line the base and sides of a 23 cm springform pan with baking paper and place the pan on an oven tray. Split the vanilla bean in 1/2 lengthways, scrape out the seeds with the tip of a knife and put aside. Beat cream cheese in a large bowl until smooth, beat in the ricotta until combined, then the eggs one at a time. Add yoghurt, vanilla sugar, vanilla essence and vanilla seeds, beat until combined. Sprinkle flours and buter over the mixture, beat until combined. Pour mixture into pan, bake for about an hour or until cheesecake is slightly soft in the centre. Turn oven off, cool cheesecake in the oven with the door ajar. Refrigerate for a couple of hours before serving with fresh fruit if desired. Cut cheesecake with a hot knife, wiping the blade between each cut. Enjoy. Loulou
