Creamy Cauliflower and Ricotta Soup

Recipe Description

I have adapted this recipe from a cauliflower soup
recipe I have cooked for years and love. 

Ingredients:

Cauliflower *
Celery *
Onion *
garlic*
Thyme *
Rosemary *
Basil *
Curry *(homemade
or cohens friendly)
Salt *
Pepper *
Water
Ricotta 

Preparation Steps:

Roughly chop cauliflower, celery and onion into small
pieces.

Time Needed:

20 minutes 

Serves:

 

Instructions:

Lightly spray saucepan with Olive oil spray.
Place all ingredients marked * into saucepan and
stir fry for a few minutes.
Add water until ingredients are just covered. Boil until
cauliflower is soft and mushy and water has reduced.
Puree with blender then add ricotta and stir through.
(Can be frozen)
