Default S.O.S. - Veggie Struggle!

Hi everyone! I'm new here. I signed up for Cohen's a couple of weeks ago. I received my eating plan a few days ago (yay! ) and I joined this forum since there is no clinic in my area (I joined the online program) and I would need all the support I can get!

I'm so excited to start the program! My start date is on Jan 30. I'm already trying to think of recipes that I would like use so that I can plan my first week meals! Here comes the tricky part...I've never been a veggie eater...ever. there are some kinds of veggies that I eat but not a lot and I can't get over the taste. So if anyone was able to overcome their aversion to veggies...please please please give me some tips!

When you say vege's do you mean lettuce, tomatoes, cucumber, capsicum etc or just things like courgettes, beans, caulif, etc.
Don't think of vege's as the old boiled to death variety, I never liked courgettes and now I chargrill them with seasoning, herbs etc and love them.

Welcome to the forum and the start of a wonderful journey.

Some suggestions would be to put veges (onion, tomatoe, mushrooms, corgetttes etc) into an omelette. I use 2/3 of vege allowance in the omelette and then serve the omelette on a bed of lettuce (rest of allowance).

Veg fritters, meat balls with veges included. I really enjoy vege lasagne, using spinach instead of pasta as the layers. I use the spinach and ricotta cannelloni recipe from the cookbook and crumble a cracker mixed with a little of the mozzarella cheese on top. I am not a spinach fan but find the layers of cheese filters through the veges - yum.

I also mix some of my fruit into meals as well ie orange or mango into salads, apple with cabbage etc - this can sweeten the meals up.

If you tend to think of your meals as medicine to get your body healthy and not as much as an enjoyment/social occasion for the short length of time it is going to take you, you will make it. You will probably find that you will enjoy veges once you accept that it is part of the lifestyle change that you have committed too.

Hi toothfairy! Thanks for replying! Haha. Actually there's only a few that I eat. Cabbages, lettuce, carrots (which I think is not on the program, please correct me if I'm wrong), squash, stringbeans, radish..hmmm. I think that's it! ) I think the chargrilled courgettes sounds good! Might be something I could try!

Hi winterboots! That's great advice! A change in perspective is really in order! Oh and I love cheese, so I think i'll try the veggies +cheese recipes you've recommended! At least these wil get me through some meals while I'm still trying to get over the taste! Thanks for the tip!

Oh and I see you've already lost 18 kg! wow! congrats! How long did it take you to lose that? My starting point and target is weight is very similar to yours! I would really love to hear about your cohen journey so far!

Hope the vege eating is going well. Last night I had an apple, celery and onion salad mixed with 1tsp mayo and diet sprite - actually must put a bit of chopped mint in next time - yummy.

I have been on the programme for 11 1/2 weeks now. Looking back it seems a long time ie Christmas & New Year are a blurr etc but in reality 11 1/2 weeks is not long at all. I know when I started, I would look at envy at the ones that are where I am now and wish I was there as well but time does go, new ones start and no longer are you the new kid on the block.

This forum is great - I spend more time than I should on it (the family get sick of seeing me either at the computer or on the IPad and think I have a sad life) but it works for me. I get so much inspiration from the ones that have gone before me, achieving their goal and dreams - kinda of "if they can do it, so can I" to the newies and it becomes "if I can do, so can you".

I look forward to following you as you begin your journey to the new you!
