the child bride still has nightmares about melted red wax up the kitchen wall ( it was a boy thing) always pressed with heavy weights for Dutch cheeses and over a coule of days and always under whey used PVC drain pipe with holes driled in the sides prob easier to post photo in yer album and let me know I will view it there cheere mark

another week
decided to add some stuff to ticker- i think both are very pertinent and critical in dealing with addictive behaviour anyway ( i am really posting this because i hate to see my diary on page 3- its all about me me me )

I think with all the posts you have made else where if you put them in here you would be close to 100 so don't stress.. there is just so much of you to go around.. well hmm not anymore by the seems of things. cheese-
i may have misled in a previous post about brine some people press in the brine - i didnt. I pressed it until i was satisfied with the density THEN- i would put it in a brine solution for a period of between 6 to 12 hours ( this determines the thickness of your rind). If your cheese is not very dense you can end up with very thick rind and salty cheese best tip- get real fresh milk ( do you know or own a cow) if not get full cream unpastureised ( you are going to heat it to safe temp anyway) i always saved the whey and used it to make fetta the jersey produced enough cream for my daughter to put on her cornflakes ( scrawny bint) and for me to make 2 or 3 kg of butter a week the milk produced a good edam and gouda at least a kg each i then brought the whey up to 98% and added some vineagar to produce fetta i dont know if shop milk will be as productive ( never tried it) we are talking a cow that gave on average 8 litres a day ( oh and the calves always tasted yummy)

wow, how farmy are you! I made some ricotta cheese with using that Kefir thing, then my Kefir thing died, (well I killed it) I need to get into that again! Do you guys have that down there? Nice ticker additions!

Mark the shortening of names is very Australian and drove us NUTS when we moved here!!! Still does when people shorten my son's name. I correct them and don't be shortening mine if you don't want to lose more turtle fodder!!

I reckon it is a male thing - when I first met my husband his whole cricket team went by nicknames, even fooled a reporter who published the nickname as they thought it was the 'real' name. He became wingman or wing commander! Dont even get me started on how our son went from Jeffrey to Rooney!
