Default Tasty Eats!

I really enjoy cooking and so to increase the enjoyment of this program I want to start a thread whereby I can add recipes and favourite dishes to recall later and for others to enjoy (hopefully ).

Of course please feel free to recommend any of your own favourites to me as well. I can't wait to get cooking...

Oh yes - I've browsed in the recipes sections before There are some creative cooks on here! Without duplicating to excess, my intention was to collect my recipes in one spot. I also struggle with the data entry format for the recipe section so I I hope its ok to keep a record in this way

Chicken Asian Slaw Salad - my dinner in Week 1, Round 3

Chicken breast
Spray Oil
Cabbage - red and green
Fresh Coriander - if fresh is unavailable, use dried and add to dressing mix
Dressing - kewpie mayo (this is full-fat - unfortunately I haven't found a low-fat mayo that isn't full of sugar), vinegar, garlic, salt

Cook chicken in a non-stick fry pan or use a little spray oil/
Chop allowance of cabbage and fresh coriander and place in a bowl
Add cooked chicken to bowl
In a separate bowl mix mayo allowance, splash of vinegar (to make a consistency slightly thicker than water), garlic and salt (and dried coriander if required). Stir.
Toss salad and dressing until well covered.

Yum!

That sounds yum, I might try it next week as I will be doing a corned beef, mash and cabbage for the family so can use some of their cabbage😊

I've used the dressing on other salads to had a creamy element. In the past, I've found that if I was feeling hungry that adding some richness with mayo was a Cohen's compliant way to make me feel satisfied.

Does anyone use a mayo that is low-fat and not loaded with sugar?

I fry up finely diced mushroom and add a tiny bit of mayo at the end and stir it through.... Makes the best mushroom sauce, yum yum!!!

Oooh Swans that gives me a great idea for 'risotto' - substituting the rice for cauliflower with your mushroom sauce, some diced zucchini and allowance of chicken. Hello Week 2 dinner idea.

Chicken and Mushroom 'Risotto'

Chicken breast
Spray oil
Cauliflower
Button mushrooms
Zucchini
Mayo

Cook chicken in a non-stick frypan or with a little spray oil.
While chicken is cooking, measure portion of cauliflower florets. Grate florets to a 'rice' consistency.
Dice portion of mushrooms and zucchini
Once chicken is cooked, put to one side, deglaze pan with a little water. Then add cauliflower and season with salt and pepper (or any other dried herbs you'd like).
Cook for about 6 mins stirring occasionally. Add other vegetables and cook for another 5 mins.
Stir through chicken.
Finish with portion of Mayo

Yum!

Chicken Bolognese with Zoodles

Spray oil
Chicken breast
Garlic
Onion
Dried herbs, salt, pepper
Tomato
Water
Button mushrooms
Zucchini

Mince chicken - I diced it until it resemble a chicken mush but you could use a food processor.
Spray fry pan with oil and add garlic and onion and cook until softened/fragrant
Add the chicken to the fry pan and use a wooden spoon to break up the mince
Add finely dice the mushrooms
In a separate bowl combine, finely diced tomato, water, dried herbs, salt and pepper to make a sauce. I used a fork to crush the tomatoes and mix elements together
Add the 'sauce' to the chicken and simmer while you make the zoodles
Use a vegetable peeler or spiralizer (if you have one) to create thin noodles from the zucchini.
Blanche the zoodles in boiling water for a couple of minutes and then carefully drain.
Add the sauce and mince to the zoodles!

Beef Stir Fry

Spray oil
Beef strips
Garlic salt
Ginger - powdered
Chilli - dried flakes
Coriander - dried
Cabbage - I used a prepackaged mix from Aldi
Mushrooms
Capsicum
Bok Choy
(And other veggies you might like that conform to your program and allowance)

Spray fry pan with oil and add herbs and spices. Stir until fragrant.
Add meat and cook until just browned. Put to one side
Deglaze pan with a little water. I add a little vinegar aswell to give the dish a sour note
Add mushrooms and capsicum to frypan and cook for about 5 mins. Add the Bok Choy and add the beef back in and cook for 2-3 more minutes
In a bowl place a serve of cabbage mix and place the stir fry on top.

Enjoy!!

Tortilla (Spanish Omelet) - usually made including cheese and diced fried potatoes. But this version is Cohen's friendly.

5 eggs (allows for one egg per day on average - this is my allowance)
Mushrooms
Green capsicum
Spray oil
Fry pan - suitable to go under grill

Dice mushrooms and capsicum and place to one side.
In a bowl, whisk eggs until well combined. Add diced veggies
Coat fry pan with spay oil and once oil is hot, add egg mixture
Turn heat to medium and cover with fry pan lid to cook
When mostly cooked through (top layer in firm but still has come liquid), turn off heat and place under grill to finish cooking the top.
Divide into cake like slices and enjoy (also tastes great cold!)

Cauliflower Pizza Base

1 head of cauliflower - finely grated or processed in the food processer
finely grated parmesan cheese

Topping - your choice from your allowance. I used:
Tomatoes
Mushrooms
Green capsicum

Preheat the oven to 230
Add processed cauliflower to a microwave safe bowl and cook for 8 minutes on HIGH
Allow to cool (so you can touch it) and place into a cheese cloth to squeeze out any excess moisture.
Combine the cauliflower and cheese
Spread on baking paper in a circular shape
Bake for 20-25 mins
Once cooked - remove and let cool slightly
Top with fresh veggies and some grated mozzarella cheese
Bake for another 5-8 minutes or until cheese has melted.

*base can be a little soggy so may need to eat with a fork - if I was on maintenance I would add almond meal to give the base some rigidity*

Cauliflower 'Risotto'

1 head of cauliflower - finely grated or processed in the food processer

Additions - your choice from your allowance. I used:
Mushrooms
Asparagus

Add processed cauliflower to a microwave safe bowl along with herbs and spices of your choice and cook for 8 minutes on HIGH, stiring occasionally.
In a frying pan, use a little spray oil to lightly cook some slices mushrooms and diced asparagus, add some lemon juice for a little zing!
Once all ingredients are cooked, combined in the bowl.

*I added poached chicken (cooked with a few slices of lemon and salt and pepper).

When on maintenance, I'd love to do a cauliflower/broccoli mix for a bit of extra colour and flavour.
