Default Chicken Kiev

Chicken Kiev

Recipe Description
Cohen's friendly alternative when you're hankering for that crispy buttery chicken goodness
Ingredients:
Chicken Breast Fillet (allowance)
Herbs - Parsley, Thyme, Mint, Chives
Garlic
Salt
Pepper
Crackers
Toothpicks
Baking Paper
Preparation Steps:
Preheat oven to 200 (fan forced)
use a paring knife to slit a pocket in the chicken breast keeping the opening as small as possible.
Chop and combine herbs, garlic, salt and pepper with a little oil
Crush crackers and season w S&P
Level of Difficulty:
Easy
Time Needed:
10
Serves:

Instructions:
Pack as much of the herb and garlic mix into the chicken pocket as you like.
Secure the opening closed by threading the toothpick through the meat
roll the chicken in the crumb (use a little oil if the cracker isn't sticking).
lay the chicken on baking paper
bake for 10 mins turn, spray and bake for another 5-10 mins or until cooked through.
Just a note - I usually scrape the herb mix out before eating the chicken - It can be a little overpowering to eat but leaves a fantastic flavor in the chicken without having to marinade.

Yum! I made this for tea last night and it was delicious. I only put garlic in my chicken though & I had mushrooms in a thickened sauce ( diet sprite and phylum) with asparagus. Really enjoyed this. Then I had a mango for dessert. mmm lucky me

Bumping this recipe as I made it last night and it was heavenly! although, I misread keep the opening as small as possible to keep the cut into the chicken as small as possible - did not really spread the herbs through very well

Was still very tasty but next will be even better lol

Tried my own version of this tonight
I put crushed garlic, basil and mint in the small cavity it was delicious. I did not crumb it browned in pan then into oven to finish
I also cooked bigger versions for the family and they enjoyed it.
I did scrap out the mixture as I liked it having the flavour through the chicken but the family left it in and loved it
