Tom Yum Soup - FANTASTIC!


Recipe Description
A great spicy soup that is really tasty. I eat this soup most days, it is great to take to work for lunch, quick and easy! 
Ingredients:
raw prawns or chicken (allowance)
2-3 slices of fresh ginger (vege allowance)
2-3 slices lemon rind
Mushrooms (vege allowance)
tomato (vege allowance)
2 cloves of garlic (vege allowance)
fresh red chilli (vege allowance)
2/3 cup water
2/3 cup sprite zero
sprinkle dried mint
sprinkle dried coriander
salt & pepper 
Preparation Steps:
I find that if I use a food processor or pound the garlic, ginger and chilli in a mortor & pestle, that I get a much more flavoursome soup than cutting - but if you can't be bothered with the extra washing up - cutting is fine!!

Easy 
Time Needed:
5 mins - quick & easy 
Serves:
Instructions:
dice the tomato and mushrooms
place into a saucepan
crush the garlic
dice ginger - really small
cut chilli - very small, if the larger red chilli I put in seeds and all.
all all other ingredients except the prawns or chcken
Bring to the boil - simmer for 10 mins
Add the prawns or chicken
Simmer for another 3-5 mins until they are cooked.
Remove lemon rind before serving
enjoy!

Oh Alison
You and I are talking about a completely different tom yum. I make the one out of the recipe book, but simply must add 2 tabs of sweetener to get the sweet sour connection.
This one is on the menu tonight - will compare and give you my feedback!!
I am sure it will be lovely even though I will use powdered ginger and fresh coriander

RT - I look forward to hearing your feedback. I went and had a look at the back of the cohens book, and yes it is very different..... I look forward to hearing how you get on. I use sprite zero in this for the sweetness, which I enjoy - I haven't used any sweetner tabs, they scare me a bit as to which are the best etc - so I just use sprite zero for all my sweetner.
This soup came from the Äll Natural Diet Recipe Book"did you see the link for this on the forum - it is FANTASTIC!!! (if you can't find it send me a private message with your email and I will email it to you)

Hey Alison
Tried your version last night and the verdict....
Well although I enjoyed it, I didnt appreciate the sprite-y taste in it. I think they are both similar to a real tom yum but made in different thai takeaways, if you know what I mean.
I think having real ginger in there would make a big difference - which I didnt have.
I think I will stick with my original from the last page of the cookbook, but will play with a few tune ups - sort of like a hybrid of the two. For example, the lemon flavour was great in yours, so will add that, and decrease vinegar.
I also dont like the concept of using sweetener - I use the hermesetas brand - but in this recipe I prefer the fake sweetness of those to the lemonade, whereas in meatballs recipe - wow, you cant beat the sprite!!
So, there we go - I am creating a new tom yum tonight with all the changes I just mentioned - I am sure it will be lovely
Question:
Does the chicken go hard after sitting in the soup all the way until lunch for you?

Hi RT - I have been playing around with Tom Yum for lunch today!
I made the recipe out of the back of the book, and really liked it as well. I think you are right about the sprite, it is quite sweet, so maybe I will add more water and reduce the sprite. I like using the fresh ginger, fresh garlic and a chilli, it really adds to the flavour!

Tried this recipe with Chicken today and really loved it, will try the one out of the back of the book and do a comparison.
But this is something that I will be making in the future.

This was fantastic Noddy! I used a teaspoon of Splenda instead of the sprite and made room for some boc choy. It's a new favorite

Mmm, I love Tom Yum and my family also. Usually I cook it like this: tom yum soup It's very delicious and easy to make as well) I will try your recipe and share my opinion, thank you)
