I just tried the baked mushrooms (minus the tomato) and with feta instead of ricotta because that's what I had in the fridge and I hadn't had feta yet this week, and I tell you they were so YUMMY!! I might try them with ricotta next time but they are definitely going to become a favourite recipe. Only thing for me is that I'm not usually much of a cheese eater and my cheese allowance is almost too much for me so I will keep this recipe for when I need a special treat! Thanks Edengirl!

thanks Rosemary, Maria & Anna for your feedback/comments ... glad that you have all been trying some of my recipes and that you like them as much as I do!
I think the key to staying on Cohen's and not getting bored with it, is to have as many options/combinations of meals available..especially tasty, quick, fabulous looking options! It all comes down to using the best produce I can find, and thank goodness Sydney has alot to offer! Bon Appetit! Eve |

Bumping this up!
I played around with your chicken coleslaw recipe except that I had curried fish and prawns (based on allowance) as protein instead. The coleslaw recipe is so good, I am definitely making it again!

Thanks Edengirl! I have just written down many of your recipes, they all sound delicious! I am only on day 10 but so far I have been very plain jane in my food choices, I am very very keen to try your chicken coleslaw (since I have only been having plain chicken and salad everyday) I will let you know how I go! thanks again
