The fish soup was even better when I added 2 bay leaves and a few dill stems to the broth... and finished off the dish with a sprinkling of chopped dill.

I just tried the baked mushrooms (minus the tomato) and with feta instead of ricotta because that's what I had in the fridge and I hadn't had feta yet this week, and I tell you they were so YUMMY!! I might try them with ricotta next time but they are definitely going to become a favourite recipe. Only thing for me is that I'm not usually much of a cheese eater and my cheese allowance is almost too much for me so I will keep this recipe for when I need a special treat! Thanks Edengirl!

thanks Rosemary, Maria & Anna for your feedback/comments ... glad that you have all been trying some of my recipes and that you like them as much as I do!
I think the key to staying on Cohen's and not getting bored with it, is to have as many options/combinations of meals available..especially tasty, quick, fabulous looking options! It all comes down to using the best produce I can find, and thank goodness Sydney has alot to offer!

Default ...updated recipe

Tomato, basil & feta salad

Feta cheese
Tomatoes, diced
Lebanese cucumber, diced
Spanish onion, diced
Shredded basil
Shredded flat-leaf parsley
Rocket leaves
Aged balsamic vinegar [thick & syrupy version with NO additives]


Combine the tomato, cucumber, onion, rocket, basil and parsley in a medium bowl. Season with salt and pepper. Drizzle balsamic over the tomato salad mixture and gently toss to combine.
Spoon the tomato and basil salad between serving plates.
Top each serving plate of salad and top with the cubes of feta.

Enjoy!!

Default updated recipe...

Roast snapper
snapper fillet, skin on
brown onion, peeled and diced
garlic clove, minced
ripe tomato, chopped
spinach leaves, well washed
salt and pepper
roughly chopped continental parsley

Method
Slice fish into three-centimetre square pieces and refrigerate.
Heat pan and gently fry onions and garlic for a minute or until soft and aromatic.
Add chopped tomatoes and simmer for a minute or two.
Add spinach leaves and turn up heat until they wilt.
Season with salt and pepper and add parsley. Simmer for another minute or so, then set aside off the heat.

Preheat oven to 200C.
Heat wide pan that can transfer to the oven and salt the skin side of all the fish. Fry skin-side down at high heat for a minute and put the pan into the oven for three minutes or until fish is just cooked. Serve fish pieces on top of spinach mixture.

Enjoy!

Default updated recipe...

Squid salad
squid, cleaned, scored and cut into 2cm strips
artificial sweetner dissolved in a little water
small spanish onion, finely sliced
kaffir lime leaves, finely sliced
lemongrass, finely sliced
coriander leaves
mint leaves
tomato, chopped
cucumber, peeled into thin, long strips with potato peeler

Method
Cook the squid in boiling, salted water until just cooked through - about one or two minutes depending on the thickness.
Drain and reserve.
Mix together lime leaves and sweetener to make the dressing.
Toss remaining ingredients in a bowl with the squid. Dress and serve.

NOTE: It is important to slice the lime leaves and lemongrass as finely as possible. Use a very sharp knife and take your time.

Wow Edengirl not only do you look like Nigella Lawson but you can cook like her as well!! These recipies are fantastic!

Thanks for posting them....its just what i have needed as i am getting VERY bored with what i have been eating. I will definitely be giving these a try over the next week.

By the way you are going great guns with your weightloss.

Bumping this up!

I played around with your chicken coleslaw recipe except that I had curried fish and prawns (based on allowance) as protein instead. The coleslaw recipe is so good, I am definitely making it again!

I am only on day 10 but so far I have been very plain jane in my food choices, I am very very keen to try your chicken coleslaw (since I have only been having plain chicken and salad everyday) I will let you know how I go! thanks again

Thanks for all your great recipes. I am nearly at goal(loss of 32kg, 3 to go ) and part of the motivation is keeping our food interesting. Your breakfast eggs are on the list, as are the prawns and mango. Keep up the good work
