Creamy Cauli & Chicken Soup


Recipe Description
Not sure about you but I crave soups once the barometer drops. So, I've come up with a creamy soup that you can adapt to whatever protein you feel like. Subsititute the chicken with fish, prawns etc and it will still taste great.

Also, this dish is made in the microwave. It's easy to adapt to a stove top by doing in a saucepan. And, if you don't have a stab blender, mash the cauli - it simply means you'll have something a little more rustic!

As a chef, I add salt to everything. There are chemical reasons in addition to taste. HOWEVER, don't add it if you don't want to - it won't change the dish at all.

I hope you enjoy! 
Ingredients:
Cauliflower (allowance)
Boiling water
Pinch salt (allowance)
Chicken (allowance)
Squeeze lemon juice (allowance)
Pinch chilli powder (allowance)
1 tea low fat mayo (or allowance) 
Preparation Steps:
Weigh out cauli and chop into small pieces
Chop the chicken into small dice
Boil the jug!

10mins 
Serves:
Instructions:
Place cauli into a mircrowave proof jug and cover with water and a pinch of salt
Microwave for 2mins on high. Remove, stir and put on for another 2 mins
Remove cauli and strain most of the water out (reserve the water, don't throw it away)
Blend the cauli (I use a Bamix) until very smooth. Add some of the reserved water if you need to
Add the raw chicken to the cauli puree and put back into the microwave for 30secs. Remove, stir and cook for another 30secs
Remove and stir thoroughly. Add the mayo, chilli and the squeeze of lemon juice
Stir and serve!

Yummy - had it last night. My husband was impressed with the recepie - he made it for me but didn't eat any as it was all mine - he says he thought the Cohen's book recepies are lacklustre and we landed in a rut of just putting chilli on everything - sorry thought i would type exactly what he was saying as he is beside me while I message you. Will do Shuki! Tell your husband I thought the same thing when I looked through the book.

In addition to the lemon juice in this recipe, I also add a little lemon zest. It's brilliant and should be utilised to the max! I use a Microplane to zest my lemons as you can get two-three serves out of 1 lemon, plus the juice. The texture is very fine so I use it on salads as well as seafood, chicken and even spicy dishes that need pepping up. Peters of Kensington (http://www.petersofkensington.com.au...spx?id=1554773) or Home Depot (http://www.yourhomedepot.com.au/prod...-cover/graters) sell them quite cheaply and they are a great investment. They are cheaper to buy over the internet than in-store (usually around the $40 mark) and I have bought from both sites before - great service from both. As a chef, they're my tool of choice!
