Default Apple Baked Chicken

This recipe will make two meals - weigh chicken breast ahead of time so you know which two meals you can use it for. Mine worked out so I had enough for a Meal 2 and a Meal 3.
Ingredients:
1 chicken breast, sliced (allowance x 2)
2 apples, cored and sliced (this uses two fruit allowances = two servings)
1/2 cup of Sprite Zero
cabbage (allowance x 2) -remember this makes two servings.
cinnamon
salt
pepper
artificial sweetner (allowance, optional)
balsamic vinegar

Spray medium glass or ceramic baking dish with canola or olive oil spray. Arrange apple slices in the baking dish.
Sprinke apple slices with a pinch of cinnamon and artificial sweetner.
Place chicken breast slices on top of apple slices.
Season with a bit of salt and pepper.
Pour Sprite Zero over chicken/apples.
Cover and bake at 180 degrees for 45 mins.
While chook is a cooking, cut up your cabbage allowances.
When chook is done, stir fry the cabbage with some balsamic vinegar and a bit of water.
Place half of the cooked apple baked chicken on top of half of the cabbage and drizzle with half the "sprite sauce".
Put other half of apple baked chicken and cabbage in seperate container for consumption at a different meal.

Sounds delicious ....

But can I just say that the cook all at once and divide is not the best way to do it .... you cannot be sure your quantities are right ... you may have 20g more cabbage in one and 20g more chicken in another. You are better to cook it seperately in a smaller dish.
