Baked Fish Parcels
Mushrooms, onion, parsley and tomato, finely diced (Vegetable allowance) Fish fillet (allowance) Salt & Pepper Lemon (allowance) or Sprite Zero Mix vegies together and place 1/2 of mixture on sheet of alfoil. Top with skinned fish fillet, sprinkle with salt & pepper. Top with other 1/2 of vegies. Squeeze lemon juice or a splash of Sprite Zero over. Fold up sides of alfoil and seal off to make an alfoil parcel. Bake in a moderate oven 5-10 mins or till cooked.

Hmm, my mouth is watering. Don't know why I forgot that before Cohens I was cooking something similar with fish. Unfortunately, it's the weekend, but maybe Monday dinner this will be it!

Sorry everyone - I must have had a blonde moment - I meant to say to cook the fish parcels for 15 - 25 minutes or till cooked.

Glad you liked it Hexi - I've been having this once or twice a week and when I have prawns I use a little less fish and put a few prawns on top of the fish - yummo!
