Default Chicken: 'Creamy' Mango Chicken Curry

NYF Cohen's Recipe
Main Protein
Chicken
Recipe Name:
'Creamy' Mango Chicken Curry
Recipe Description
An Indian inspired Cohen's style curry using cauliflower and mango to make a cream sauce.
Ingredients
Vegetables (weigh as allowance)
Cauliflower
1 tsp Spring Onion
Half Birds eye chilli OR substitute dried chilli

Fruit (weigh as allowance)
Chopped Mango

Poultry (weigh as allowance)
Chicken - sliced thinly

Curry 'paste' (as per plan allowance)
Equal parts of Garlic powder, ginger powder, crushed cumin seeds, turmeric, tsp water (all within allowance).

Sweetner to taste, olive oil spray.

Equipment: small pan, hand blender or Tupperware TurboChef / equivalent.
Instructions
Weight all of the vegetable allowance together - do not cut until your measurements are a-ok.

Steam or roast the cauliflower til oversoft.

Use a very small pan, lightly spray with olive oil and add the 'curry paste'.

Heat over low heat until fragrant

Add Chicken from your allowance

Cook chicken over low heat - don't burn the paste, if it looks dry just add some water.

The cauliflower should have finished steaming by now - blend or use a Tupperware TurboChef / equivalent to combine the cooked cauliflower with 5 tbsp of water and your mango allowance until a creamy consistency. It will look a little like baby food. (TIP - I drained some of the 'juice' from my chicken pan to ensure the flavour went into my 'cream sauce').

Add the cauliflower and mango mixture back to the pan and combine with chicken. Do a small taste test, and add sweetner until it pleases you. Don't go too overboard with the sweetner.

Serve and enjoy!

Enjoy guys, let me know how it goes and if you don't like it that's ok too : ) it will take a bit of tweaking to your own individual tastes. I'm gonna use the cauliflower from now on whenever I feel like anything creamy.....I sense a creamy garlic prawn coming on....hehe

I thought it was yummy but I definetly need to add less chilli for me next time and blend my cauli longer.

I steamed my cauli for 15 mins so it was saturated and blended nice n smooth, tonight I experimented with a different dish and didn't cook my cauli as long and it wouldn't go to a smooth consistency : ( I know what you mean about the chilli, I used 1 whole birds eye chilli and my eyes and nose were watery, I thought half would be ok next time. I think I'll be making a lot of this in winter to keep me warm and fuzzy. Thanks for trying it Be Light

Brooke I had this for supper tonight and it was amazing! I am not a fan of curry at all so only used a small amount of my Cohen approved curry mix. Next time I will use a bit more as it turned out more like a nice sweet a sour stew! I added red onion and celery with the chicken. I served mine on a rice cake which absorbed some of the sauce. So almost tasted like rice with mine! Thanks so much for adding this!
