Yummy Thai Chicken Balls!
Chicken Mince (allowance) Fresh Coriander (allowance) finely diced Spring Onion (allowance) finely diced Chilli Powder Garlic powder Salt & Pepper Mix ingredients together and form into 6 or 7 small bit sized balls, spray frypan and cook balls for around 5 min (turning once) Serve on a bed of Bok Choy and Mushroom (with a dash of balsamic vinegar) all of which can be cooked in the same pan (on the side) Yummy - Thai Cuisine!

Hexi - you're a genius - Thai is my favourite food - I'm going to try that. I love cooking - I put a cookbook set out through work to raise money for a local hospital foundation helping cancer patients - I thought on this diet don't think of cooking just follow the programme but you've made me think .....hmmm maybe we can still make this food more interesting - I'm going to put my thinking cap on.

Had it today for lunch with Debs, and then again for dinner with my husband. Very nice taste, and quite filling, more than if I just don't make meat balls funnily.

Hey Hexi,
I was all inspired and made these last night - much to the delight of my Thai food fan partner who is also doing the program with me (this own personalised one). Though I used fresh chilli and just placed the spring onion, coriander, chilli (all weighed as part of the veg allowance) and garlic powder in the mini wizz and wizzed it up, then added the chicken mince. There were just so delicious and a change from the regular. My partner made a bit of chilli mayo (mayo allowance and a shake of chilli powder) and they were simply devine! Thanks for the inspiration - tonite my partner is doing a Cohen's take on Tom Yum Soup

Either steamed in the microwave - only for a very short time...or cook in the frypan with a bit of water again short time before it gets too mushy

Hexi - Thai food is my all time favorite - going out today to get the ingredients and that's my dinner tonight. My mouth is watering already at the thought!!
