Coconut oil chocolate
Coconut oil Stevia (or other sweetener) Desiccated coconut Cocoa Vanilla (to taste) Put dry ingredients in a bowl and mix Soften or melt the coconut oil Mix oil and dry ingredients together Place in moulds and let set in the fridge. I used silicon mini muffin trays as moulds and this made 5 to 7 My friends said this was perfect, my partner found it too bitter so I reduced the cocoa to 3 tablespoons and it was perfect for him. Add any fruit or no coconut according to your taste. I think a white version could be made using cocoa butter but I haven't tried that. |

Thanks Ciors for the recipe, I have saved it in my One day folder and will look forward to making it up as a special treat, you are so clever where did you get this from.

Yep...it's still in my "one day" folder too lol. I was looking for healthier Christmas recipes, and I googled raw food recipes...lots of very interesting things about that...some are a bit....ummmmmm, I don't think so! But the choc, and a homemade crispbread too looked very good. Try it on hubby...I can only get coconut oil from a health food shop. Good luck

Coconut Ripple
1/3- 1/2 cup coconut oil * 1/3 cup organic salted butter (be sure to use salted…the saltiness gives it a lovely kick) * 2 tbls raw cacao, or cocoa * 1 tbls rice malt syrup * 1/3 cup coconut, shredded or flakes (for a chunkier version) * 1/3 cup of frozen raspberries Melt the butter and oil (in a pan or microwave…the oil takes longer to melt so add the butter a little after); stir in the cacao and syrup. Arrange the berries and coconut on a sheet of baking paper on a baking tray or plate (a dinner plate is ideal – the slight indent creates a good shape). Pour the coconut oil mixture over the top and pop in the freezer. When firm either break into shards or cut into wedges. Not sure about the butter there are so many recipes that don't use it but damn it looks good...will be test running it this afternoon |

Recipe
Take out and score deeply. Return to the fridge or freezer. It doesn’t matter which. Generally we find 5-6 handfuls of fruit and/or nuts is a good quantity for the cacao/coconut oil mix. However, don’t feel restricted to those items suggested above. You might to consider:

My first attempt at Coconut Ripples are setting in my freezer now! I added cinnamon, ground cloves and almond flakes just to be extra fancy, although I used Stevia as I didn't have the rice malt syrup - can't wait - thanks for the recipes!

How was it Caz, I haven't tried making anything like this as I am a scared that I will keep eating it till it is all gone as self discipline is not one of my strengths. However the recipe looks really tempting so quite tempted to try.

It looks fabulous but I haven't had it yet. I made it to take with me to the blue mountains and safely share with friends
Might think about trying some tonight once I get home but either way I'll report back once I do! |
