Thumbs up Creamy Zucchini and Basil Soup

Creamy Zucchini and Basil Soup


Recipe Description
Tastes naughty but it's 100% Cohen's! 
Ingredients:
Zucchini (allowance)Onion (allowance)
2 Fresh Basil Leaves (allowance)
Ricotta cheese (allowance)
Salt
Pepper 
Preparation Steps:
1. Cut up zucchini
2. dice onion
3. Slice basil leaves 
Level of Difficulty:
Easy 
Time Needed:
10 mins 
Serves:
1 serve 
Instructions:
1. In pan, Soften onion in olive oil sprayand tblsp water (you dont want to brown the onion!)
2. Add zucchini and basil and 1 cup of water.
3. Simmer until zucchini is soft
4. Remove from heat.
5. Add ricotta
6. Blend til smooth and creamy.
7. add salt and pepper!
8. YUM!!

I tried this over the weekend with a few modifcations (I used feta instead of ricotta and added garlic) and it was SO yummy! Didn't seem like diet food at all

OMG - this is soooo good!! I also added garlic because I am a garlic nut. It tastes too good to be Cohen's.

Was wondering how it may go if I cooked it the night before and reheated for lunch at work the next day? Should I leave out the ricotta and just add it after I have reheated it??

Kirsten I make soup with ricotta in it and freeze and reheat so can't see why it would be a problem
