Default Creamy Cauliflower and Ricotta Soup

Creamy Cauliflower and Ricotta Soup


Recipe Description
I have adapted this recipe from a cauliflower soup
recipe I have cooked for years and love. 
Ingredients:
Cauliflower *
Celery *
Onion *
garlic*
Thyme *
Rosemary *
Basil *
Curry *(homemade
or cohens friendly)
Salt *
Pepper *
Water
Ricotta 
Preparation Steps:
Roughly chop cauliflower, celery and onion into small
pieces. 
Level of Difficulty:
Easy 
Time Needed:
20 minutes 
Serves:
 
Instructions:
Lightly spray saucepan with Olive oil spray.
Place all ingredients marked * into saucepan and
stir fry for a few minutes.
Add water until ingredients are just covered. Boil until
cauliflower is soft and mushy and water has reduced.
Puree with blender then add ricotta and stir through.
(Can be frozen)

Thanks Mary, i am loving the sound of this cauli cheesey soup now the weather is cooling down! I have never been much of a soup fan but your combination does sound very yummy - just what i need to spice up my cohen program! Pandora

Finally sounds like a nice way to use Ricotta! I have been struggling with that one. Do you use the smooth ricotta? Or the chunky one?

Alli, I use the smooth ricotta and it makes the soup nice and creamy

Yeah, so I did this all totally wrong - burnt the cauli then added some water so it turned quite dark brown, then managed to boil off all the excess water so it wasn't incredibly soupy - more like a pasty mush - but hey - still tasted great!

Hopefully I can follow the recipe a bit better next time.

This sounds really nice, so wanting to eat soup at the moment, it has been so cold here in Christchurch, lovely mild day today thou. I remember when Embee posted this recipe, always ment to try it.
I will make this over the weekend.

Thanks for sharing tried this last night minus the curry powder It has got all my favourite ingredients in it was very yummy
