Default crunchy cauliflower and parsley curried egg

crunchy cauliflower and parsley curried egg


Recipe Description
together with or ontop of a crunchy cracker - easy to make
ahead egg meal 
Ingredients:
4/5 cauliflower florrets
1/5 parsley (not flat
leaf)
0.5 tsp curry powder
0.5 tsp mayonnaise
0.5 tsp water 
Preparation Steps:
boil egg
pull apart cauliflower florrets into small bite size pieces
shread parsley 
Level of Difficulty:
Easy 
Time Needed:
10mins 
Serves:
Instructions:
mix curry powder, mayonnaise, water to form paste
in same bowl mash boiled egg
mix raw cauliflower, curried egg mix and parsley
enjoy with cracker

can make ahead of time, just remember to separate the
curried egg mic from veg in a freezer bag. that way you
can mix just before eating to keep the veg fresh!

I grated the cauli for mine. Another great recipe from waytolose50!

This sounds yum, can I ask, what time of day do you eat this?
I would love an egg meal at lunch or even dinner, but it would mean having a meat or cheese meal for breakfast ... and I just don't think I could stomach that!

I have been told not to use commercially brought curry?? What do you use?

My clinic says to use Clive of India curry powder. They also make their own at the clinic and sell it.

I'm sure there are recipes on this forum to make your own curry powder.

My clinic still bans Clive of India, but I've read that others accept it......there seem to be a few clinic discrepancies round here.

I think it's primarily to do with fenugreek. Its not allowed on the program and it seems to be in most if not all commercially produced curry powders.
