I made this soup also and loved it, but I used ricotta and what I did was blended the cauli, capsicum and ricotta, before I added water to make a soup I placed approx half quantity into mini muffin tray it made 3 mini muffins and cooked them, as a result I ended up with a smaller serve of soup but some amazingly tasty muffins, I really had to remind myself that they were cohen friendly. I added onion flakes and a dash of chilli to the mixture and you could really taste it in the muffins....

Hubby and I had it again for lunch yesterday ,..... still as good as ever, I am now going shopping so I can make and freeze some for next weeks lunches.

OMG i just had this for lunch it was devine!!!!! definitely gonna be a weekly treat for me. All i used was cauli, curry powder, feta, and garlic it was yummy

This one definitely fits on a colder evening. I made a batch last weekend and had my first meal from it tonight. I used fresh cauli, fres hapsargus and feta. Wonderfully smooth flavours.

Brilliant and warm. Definitely a favourite of the Cohen recipes.

I used tumeric (in replace of curry), garlic powder and onion powder (allowance) and it was amazing...

I added onion and garlic to the boiling...was tasty...ditched the curry (cohen's friendly) all together. But I like the tumeric idea...will have to try that.

This is my FAV dinner...love love love it! Once a week that is

I put mozzarella on top of mine with one crushed cracker blended in, and one cracker crushed on top.

I also fried the onion,celery and cauli first with some ground cumin, ground coriander and chilli flakes to flavour it up. it was also divine.

Be careful with combining two types of cheese.

Only possible if you have the same veg allowance for both types of cheese.

Sorry, forgot to clarify - I omit the feta (and put one pounded cracker in the soup) - and have mozzarella dropped into it instead! (some melts in, some stays on top)

Well, everyone was raving about this soup, so tried it and thought...bugger - now I have used my cheese allowance on THIS instead of pizza or garlic bread. Wasnt horrible, but for me just wasnt a constructive use of cheese. he he

Wow...this is my recipe from when I was doing Cohens back in around 2005 (I was known as dkma back then)!! Good to see Cohenites are still enjoying it!!
