As a variation, you can crumb the chicken breast first with ground up cracker allowance (makes it nice and crunchy when cooked) and/or add some fresh garlic to the spinach before stuffing the chicken.

Looks and sounds fantastic Gremlin... I will definitely be getting some Roma tomatoes and doing the semi dry tomatoes and this recipe during the week. Yummo!

Ummm not sure if this is still the cohens rule but i thought we werent allowed to have more than half a serve of a full tomato in one sitting? and roma tomatoes were definately out!!

I think that is what Gremlin did - if you follow the link 'one semi dried tomato' is actually 1/4 of a tomato.........well that is I thought (and followed). I didn't use roma tomatos but truss tomatos and it worked really well.
Just wanted to let you know I adjusted the sauce a little and it worked out really well - I fried onion allowance with a bit of garlic and once tomato allowance had roasted I mushed in up with the onion/garlic and mayo allowance and served on top of chickenwith a little salt and pepper - YUM! Nice and thick too. |

Hi Hexi, Kate's right - 2 of the semi-drieds = 1/2 tomato or less. And I asked my clinic directly about the Roma tomatoes before posting the recipe and they confirmed that as long as the tomatoes are the normal sized, not mini, and we follow normal tomato rules then they are fine. I asked them because there was nothing on my plan at all that explicitly forbid them, like there was for the cherry/grape ones. Apparently any 'normal sized' varieties are okay.
If anyone else's clinic says otherwise or they are unsure, they can use other tomatoes - they just may not dry out as effectively - trial and error! Kate, love the sound of that variation...I'll have to try that next time!

I just used regular old tomatoes cause I didn't have any romas in the house anyway. And it was brilliant! Thanks so much for always sharing your wonderful recipes with us, Gremlin!
