Tried this today -- YUM-O! Instead of mayo, I used cottage cheese to make up part of the cheese allowance.

My supermarket didnt have mozzarella so I used part cottage and part ricotta - really enjoyed it!! Going to have it again tomorrow for lunch, and will try it with mozzarella at some stage too. Ive decided to cook my vegies first (tom, mush, onion, caps) put those on the crispbread and then put the cheese mixture on top. That should be fab!

Thanks for sharing this recipe. I wonder why they didn't include it in our recipe book. Hubby loves cheese and Im sure this is will become on his absolute favorites! Cant wait for him to try it!

Hi for starters who hasnt reach the refeeding program yet, IS GARLIC counted with your veggie allowance? or you need to limit for up to 1 tsp only accumulatively? IM CONFUSED!

Garlic is included in your vege allow (Fresh garlic that is)
The reason for 1 tsp in this recipe is that more would probably be too overpowering. I often add more in other recipes when it needs it! |

In answer to your question, Auburn, I usually DON'T DO VEG, i do salads In fact, i just had a great breakfast of tomato, baby spinach, red onion, with pan fried chicken (beaten flat with a mallet thingy), covered in fresh garlic, paprika. Then a squirt of low fat mayo, salt and pepper. So simple, so fast, so tasty and filling. Can't help with the veg - it doesnt excite me to eat veg now that all my faves are not allowed - plus they all weigh too much, so it is baby salad leaves all the way for me! Don't know how this theory will work for me as the weather cools - probably soups for most meals! Hoping someone else will help you about the veg - but I don't think you can go past fresh garlic, paprika and using red onion...great combo. |
