Default Faithy's Favs~

I decided to make my own thread on recipes I just love & keep going back too. I thought I'd also include some along the way for re-feed etc. Down the track I might add photos.. depends how inspired I am

Beef Stroganoff ~


Thinly sliced beef ~ allowance
Onion thinly sliced ~ allowance
Mushrooms sliced ~ allowance
Green Capsicum diced small~ allowance
Tomato diced small ~ allowance
Garlic ~ allowance
Mayonnaise ~ allowance
Sprite Zero
Cracked Black Pepper
Pinch Salt
Chilli Powder
Oregano
Nutmeg

Lightly spray non stick frying pan with your choice of oil...
Brown the beef seasoned with salt, pepper & chilli powder..
When browned & cooked add a decent splash of Sprite Zero & a small amount of water...
Add oregano & nutmeg & simmer lightly, then adding all the veggies..
Once the liquid has reduced & the veggies are cooked, add allowance of mayonnaise, stir & heat through...

Yummo!!!!!!!!!!!!

Chicken Chow Mien ~

Chicken diced very small or minced if preferred ~ allowance
Shredded Cabbage ~ allowance
Tomato (small amount diced small) ~ allowance
Onion ~ allowance
Celery ~ allowance
Green Capsicum (small amount diced small) ~ allowance
Sprite Zero
Half a Teaspoon of Curry Powder (more if desired but remember allowance)
Pinch Salt
Cracked Black Pepper

Lightly spray non stick frying pan with your choice of oil...
Brown the chicken seasoned with salt & pepper ...
When browned & cooked add a decent splash of Sprite Zero & a small amount of water...
Add curry powder & stir through..
Add all the veggies & mix well, allow to simmer..
Once the liquid has reduced your food is ready..
For those on re-feed you can try adding allowance (or half) of diced pineapple (REALLY good.. BUT only for those on re-feed)

hi i had the chicken chow mein for lunch today it was very nice and surprisingly there was quite a bit of food i was going to have my crispbread with it but there is no need so i guess i will look forward to that later. is it ok to have this meal again for tea time i.e. twice in the same day???

I've written this one up a number of times & HAVE read it somewhere else so I take NO credit for this recipe..

Apple, Cinnamon Slice ~

Apple peeled & sliced in thin slices
Cinnamon
Sprite Zero
2 Crisp breads

Place all ingredients (except crisp breads) in a saucepan & cook the apple till soft & there is no Sprite Zero remaining
Layer apple slices on to crisp bread & place the second crisp bread on top
Refrigerate till cool

YUMMY!!!

Thumbs up Apple Crumble ~

Ingredients:
Apple (allowance)
Sprite Zero
Cinnamon
2 vita weats

Method:

Peel & slice apple, stew in sprite zero & cinnamon. For extra colour stew the apple with the apple peel.
Stew until apple is cooked, leaving some sprite & cinnamon syrup in saucepan (about a desert spoon)
Layer apple in a small ramikin dish
Place broken vita weats & left over syrup in a food processor & blend until a (very) thick paste
Place paste on top of apple & cook in a moderate over until top has browned.

Serve on own or with natural yoghurt allowance.

Thumbs up Chicken Breast with Sweet Chutney Style Sauce~

Chicken Breast (Allowance)
Salt
Pepper
Paprika

Sauce
Tomato (Allowance)
Capsicum (Allowance)
Onion (Allowance)
Salt
Pepper
Chilli powder
Sprite Zero
Water

Cook chicken breast that's been seasoned with salt, pepper & paprika in a non stick frying pan until cooked. Remove from pan & allow to sit while cooking the veggies.

Dice veggies to fairly small pieces & season with salt, pepper & chilli powder, place in frying pan with water & Sprite Zero till just covered. Cook till veggies have gone soft & the water & Sprite have evaporated a fair bit.
When veggies have softened, blend veggies & the left over liquid till a nice smooth sauce then place back in frying pan.
Cut the chicken breast in to strips & place in the sauce over the heat. Boil for about half to a minute & then serve.

Default Apple & Zucchini Muffins~

OK, so this recipe is still on the experimental side & a little bit dodgy. Let me know if you have more consistent success than me.

Zucchini (Allowance)
Apple (Half )
Cinnamon
Sprite Zero
Egg (Allowance)
Salt
Pepper

Stew apple & cinnamon in Sprite Zero
Grate zucchini & blend apple & zucchini together.

Now I've tried this both the following ways..
1) Beat egg white till stiff. Blend egg yolk & apple, zucchini mixture together & then fold through beaten egg whites with salt & pepper.
Spray ramekin dish with oil & cook in a moderate oven for approx. 15 minutes.

OR
2) Beat egg with blended apple & zucchini mixture with salt & pepper.
Spray ramekin dish with oil & cook in a moderate oven for approx. 15 minutes.

I think the 2nd one seems to work a bit better, but the mixture of the first one is so damn good when licking the bowl (LOL)

If you try this one, let me know how you go with it..

Oh & I've also tried it with a crumbled up crisp bread but decided the crisp bread was too precious to add to the mix

Yours have been the first that I have tried out (as I am only new!) and I can't believe how much I LOVED the beef stroganoff!

Faithy, firstly I want to say how much I have enjoyed reading your diary - you are amazing and look absolutely amazing too. Well done to you!!! Fantastic effort and an inspiration to all I am sure.

But, I also want to say - wow - your stroganoff was fantastic. My fella even said to make it a regular I can't wait to try your other recipes.

Default Curried Egg ~

OK this recipe is REALLY weird (may give some the *gag* factor)but I kind of enjoyed it.. gives new meaning to curried egg..


Cabbage (Allowance)
Tomato (Allowance)
Green Capsicum (Allowance)
Onion (Allowance)
Egg (Allowance)
1/2 teaspoon curry powder
Diet Sprite
Pepper
Mayonnaise

Shred veggies finely & cook in a frying pan with sprite zero, pepper & curry powder.
When all liquid is cooked down & veggies are cooked add beaten egg & stir through veggies.. don't over cook the egg, the egg should be soft & not hard scrambled.
Serve on crispbread.

Default Chicken & Cauliflower Soup ~

Chicken (Allowance)
Cauliflower (Most of Allowance)
Onion (Allowance)
Tomato (small segment)
Curry Powder
Black Cracked Pepper
Touch of Salt
Water

Put all ingredients in a saucepan & add water till vegies are just covered.
Boil till cooked (approx. 10 minutes)
Blend well.

Serve with crispbreads.

VERY yummy & you control the thickness of this soup. If you want it thicker then use less water in the cooking process as I've found if you have too much & throw the liquid out you lose a lot of the flavour.
