Default Zucchini Hash Browns

Zucchini Hash Browns

1 Egg
Zucchini, grated (allowance)
Onion, thinly sliced (allowance)
2 Crispbreads, crumbed
Herbs

1. Mix the vegetables
2. Beat egg and add to vegetable mix
3. Add crispbreads to mix with herbs
4. Pour into frying pan in small sections and cook both sides

Thanks, Ang. I might try those tomorrow morning, although I've been loving my yoghurt with a bit of sweetener and half of one of the fruits.

Started 11/1/08. Lowest weight reached 63.8 kgs on 10/11/08 and 40 kgs down. Thank you Dr Cohen.
Back again to do it all over again, starting from exactly the same weight as last time.
My health is not good and my doctor is predicting all sorts of nasty things if I don't lose weight.

Back again for the support. Still think the diet and the forum are the best ever, but too old to do it again. Now losing again slowly on maintenance diet. Ticker shows next intermediate goal only (5 kilos).

I do similar except I make scrambled eggs and don't put the crispbread as I like putting the egg on the salada. I peeled and grat zucchini and mix it with egg chili flakes and salt. The egg is so light and fluffy it tastes better than any scrabled eggs I have had outside of cohens.

I have these every Sunday morning and they are so delicious!

My version excludes the crackers (I need them later in the day!) and adds a bit of curry powder to give it some kick.

They remind me of these delicious patties I used to make pre-Cohens (egg, onion, grated potato, bacon, curry powder, topped with sour cream and tuna) so I feel like I'm eating 'old' food.

Hoping I'll be able to have them with tuna (but minus the bacon, potato and sour cream!) on refeed again!
