Lunch at work?
Everyone else is pulling out the sandwiches and leftover pasta... i have been eating canned tuna with some fresh spinach and tomato. What does everyone else eat for lunch when they are at work? |

Your tuna plus spinach and tomato sounds good! For variety, have a look at some of the muffin recipes Also, frittatas are easy to make and good eaten cold or zapped in the microwave You can take salad of any description, but also a 'left over' chicken curry, or hamburger patty with veg or whatever. You seem to have a fridge & a microwave, just cook up your lunch the night before, chill and take with you Otherwise, cheese & crispbread with celery and tomato is a good standby Cheese & crispbread with savoury vegetable pickly / chutney / paste? Lots of things to take. Model your lunch on the 'left over' theory and you won't feel that you are missing out ... and don't forget to pack an 'Apple Slice' or 'Apple Muffin' for afternoon tea. Recipe for that in the forum, too. ... and don't forget - the Meals are not Meal #1 = Breakfast. The Meals are 3 x meals per day, with a choice from each of the menu options once per day So you can have eg toasted cheese pizza for breakfast, egg & vegetable muffin for lunch, and beef & mushrooms for dinner, or whatever combinations are offered in your menu selections While you are cooking your beef & mushrooms for dinner, you can cook another piece of beef, thinly slice when cold and have a 'rare roast beef salad' (beef on diced zucchini tossed with mayonnaise and fresh parsley) for lunch, with a rice cake or salada. Yep my work favs are chicken and salad, beef and salad, zap a feta and cauli soup, rissoles and veg, tarrago chicken with zuccini....there is lots. I used to cook up my lunch just after dinner the night before so it was all ready to go...
Now I just chuck together a salad usually and cut up cheese or quickly cook the protein in the morning.

I have two small fry pans, Just those little 15cm or so ones... and while I'm cooking dinner, I just have both of them going and double up. When you are weighing out your portions just make two piles of the same thing and cook each one in each frypan. Eat one for dinner and put one in a container and take it to work the next day!!! Stirfrys are great and easy.. and don't taste terrible the next day when you heat them back up again.

I tend to take thai beef salad or soup. Lately i have been cooking up some celery,tomato, capsicum and chilli, take a rice cake or crackers and my portion of mozzarella zap in the microwave and pizza here we come.

Well wow... so man yummy ideas. Apple slice yum! need to figure out some more inventive ways of using the crispbreads... have tried a couple of times with saladas but the always go soggy Soup! Cauliflower and Feta... im so hungry just thinking about it!
Thanks guys... I have just made up a bit of chicken casserole with chopped green capsicum onion and mushroom. sooo nice yum yum need to make my own little cookbook |

Yep the feta and cauli is my fav....
Today I whipped up a chicken and asparagus soup - lots of herbs very very yum

oh my golly gosh i had the tastiest soup yesterday.. it is in the book.. it is the roasted tomato soup with little ricotta balls... yum! was sooo nice... im going to try making this and freezing this for work too.... mmmm i love soup

I love the chicken and Mango salad its in the recipe book and its devine! I had never had mango till i started this diet and its amazing its just like eating lollies mmm mm mm
Another fav for me at the mo is cauli allowance and cottage cheese with craked pepper on top , i cook the cauli in the MICROWAVE for 2 mins then zap the cottage cheese on top for 1 min adn lunch is donw while everyone else is still unwrapping their galdwrap!! and vege soup is awsome then with mozzeralla on crakers with it AWSOME! |

I have a salad every day at work for lunch which I prepared the night prior while I'm cooking dinner. It's delicious and my colleagues are often envious !
I have a mix of baby spinach leaves, lightly cooked onion, diced fruit (prefer mango, pawpaw or honey dew melon) and either cooked Chicken, Prawns or Steak, diced up. Sometimes I add some lightly cooked red cabbage to make up the veggie allowance. With a bit of balsamic vinegar - it's yummy. |
