MANGO SALSA (GOES GREAT WITH PRAWNS)
1 ripe mango, flesh diced (allowance) Red Chilli, finely diced (taken from vegie allowance) Green Capsicum, finely diced (taken from vegie allowance) 1 Tablespoon Fresh Coriander, chopped (taken from vegie allowance) 1 TAblespoon Lime or Lemon Juice 1/2 Sweetener (optional) Combine juice with sweetener tablet and stir till dissolved. Combine rest of ingredients in a bowl and pour juice mixture over just before serving, stir well. Serve with Prawns (allowance) and salad (to make up rest of vegie allowance). Enjoy! Variation for rest of family or if allowed on re-feed: Add some diced Avocodo to Salsa and substitute Red Capsicum for Green one.
