Smile Cauliflower Eggs

Cauliflower Eggs


Recipe Description
Scrambled Eggs with Cauliflower 
Ingredients:
Cauliflower
Egg
Salt & Pepper
Other herbs if you wish 
Preparation Steps:
Cook cauliflower
drain and use a blender to make into mush
Add egg & a splash of water along with salt and pepper (to
taste) and any other herbs
Blend 
Level of Difficulty:
Easy 
Time Needed:
5 mins 
Serves:
1 serving 
Instructions:
Place all in a heated pan and stir as per scrambled eggs.

Serve with crackers or as is

Hi Zanne,

Thanks for posting the recipe - it sounds yummy - I'd imagine the cauliflower actually thickens up the scrambled egg???. I'm going to give it a go on the weekend!

Glad you all like.

It is better if your cook the cauilflower the night before and put in fridge as it seems to blend better.

Thanks Zanne, my day one tomorrow will start with cauliflouwer eggs, i'd never have thought of that until now! Might add sliver of tomato, sliver of onion etc. Pandora

I have a question- when you use the blender don't you lose some of the carefully weighed ingredients? I find it tough to scrape every single bit out of the jar, and out from under the blades.

Try putting a touch of water in mix which will help with that.

Also i have a bullet blender (you can get them from homemart for about $40) and you can turn it upside down and the mix drains from the blades.
I then scrape the sides with a small wooden spoon.

I had something similar for Brekkie this morning, only I didn't pre-cook my Cauli nor did I blend it..the other thing I did differently was to add some diced Celery..

1 x Jumbo Egg
X g's of Cauli (broken down into tiny Florets)
X g's of Celery (Diced)
Salt/Pepper to taste (I only use Pepper as I don't like Salt)
Extra Light Olive oil cooking spray

  1. Preheat nonstick frying pan with a very light spray of Cooking oil
  2. Add Cauli + Celery, heat thru
  3. Beat Egg + Salt/Pepper in a cup
  4. Add Egg mixture to pan + stir thru in "Scrambled" Egg fashion.
  5. Serve with Drink of choice, & or with or without Crackers
Tomorrow, I might use a little less Cauli, and throw in some Tomato for something different.

Thanks for sharing I have never thought about combining cauliflower and eggs looks interesting very simple I have to give it a try
