Fish Cakes
Just thought I would pass on another recipe I had last night. It was really fresh tasting. White fish (allowance) Fresh herbs (I used basil, Mint and Corriander from my new garden) shallot just a little. Salt and pepper ground ginger lemon rind with a little juice (dont forget to count this as part of your fruit allowance) Put everything into the food processor and process until fish has broken up but not until it is Pureed. Form into a fish cake shape and fry in a non stick pan over medium heat until done. Great with a salad or I had cabbage and pretended it was noodles!! |
