Bakery Apple Slice


Recipe Description
Many apple slice recipes on here, but I have fiddled with this one and think I have cracked an absolute beauty. The texture of the apple, combined with the gel like consistency of the filling makes for a decent mockup of the original. 
Ingredients:
crispbread
apples
psyllium husks
diet sprite
juice of a lemon
sweetener 
Preparation Steps:
Determine the size of the container you are using..I found one that fits the Premium Nabisco beautifully in a 3 biscuit across formation. If your container fits only two or four, simply adjust the recipe to suit the size you are making. It is easier and more delicious to make these ahead of time and leave them sitting in the fridge - they get better with time!

Instructions:
1 Place your crackers in the base of the container.
2 Peel and slice apples - one apple to two premiums ratio
3 Into a saucepan, put apples and pour in diet sprite to cover bottom of pan, on low heat. Keep stirring until the apple changes appearance - but still retains its form - you essentially want the apple to still be in slices, but softer.
4 When apple is ready, pour allocation of lemon juice into saucepan, and sprinkle - depending on volume of apples you are making - one teaspoon of psyllium husks and stir until a soft gel is formed.
You do not want it to be goopy and glue like, just causing a glaze over the apple.
5 Add extra sweetener if needed
Poor over the top of the crackers evenly
Top the apple mixture with the upper layer of crackers.

This recipe is best made in the morning for after dinner and definitely keeps well for a day or two in the fridge and actually tastes better. Things to be aware of - go easy on the psyllium - too much alters the consistency to a chewy glue, too little means the apple is runny..the right amount will have you very happy in a few hours!!

This recipe is going to follow me through to maintainance - I love it sooo much. The only thing I have altered now that I am in refeed and about to step out into the world is that I personally prefer to use a sprinkle of xylitol over the slice when serving - however Dr Cohen has not approved this sweetener. It is however the finishing touch that makes this taste just like a REAL APPLE SLICE!!! Enjoy
