Cheesy Eggplant Parmigiana
For Tomato Sauce:
3 ripe tomatoes 1 tsp. olive oil Minced white onion Minced garlic dried basil parsley 1/2 cup low sodium chicken broth 1 tbsp. tomato paste 1 bay leaf 1. Rough chop tomatoes and then puree. Add water. 2. Saute garlic and onion in olive oil until soft. 3. Add pureed tomato, parsley, basil, bay leaf, chicken broth + 1/2 cup water and tomato paste. 4. Season with salt and peper. 5. Let it simmer on low heat to thicken. **Remove bay leaf after. For Parmigiana Eggplant, thinly sliced lengthwise garlic powder salt/pepper Mushrooms, diced Cauliflower, diced Sliced garlic Low fat cream cheese - mix it with chopped parsley and basil 2 slices of Cheese Singles 1. Preheat oven to 350 degrees. 2. Spray eggplant with cooking spray. Sprinkle with garlic powder, salt and pepper. Bake for 3 mins on a baking sheet. 3. While the eggplant is in the oven, saute garlic, mushrooms and cauliflower. Let cool. 4. Start layering! - Eggplant noodles --> herb cream cheese --> mushroom/cauli mixture --> tomato sauce - Repeat til necessary, top with sandwich singles. 5. Cover baking dish with foil and bake for 15mins. Remove foil and bake for 10 more mins. Good for 2.
