Prawn, Asparagus and Mango Salad

Recipe Description

A deliciously light salad for lunch of dinner.
Note: Wheat free, Dairy free, Nut free, Egg free 

Ingredients:

salad leaves
vinegar
salt & black pepper
prawns
mangoes
asparagus
tomato
parsley
mint leaves
garlic 

Preparation Steps:

De-shell cooked prawns
Pre wash salad leaves

Instructions:

In a bowl add salad leaves, tomato, asparagus (canned), tomato and onion in a bowl.
add salt and pper to taste with a small amount of vinegar & garlic. add in prawns.
Sit aside for about 30min in the fridge covered.
Just before you are ready to serve, add in mint, parsley and mango.

This is also delicious with fresh asparagus. I do one similar quite often - so yum.

what do you marinate the prawns with?

Nothing they are simply put in the salad with the vinegar and garlic. The prawns will take on some of this flavour while they are in the fridge

Do you know if you can have your fruit allowance ie) 150gm Mango with the salad and prawn?

Sure can Lemondaey. You can add the mango and make a brilliant salsa - just yum! Although mango at the moment (here in cold Canb) are up to $8 each... not happy!
