Roasted Garlic Soup w/Egg & Mushroom
Recipe Description
This is actually my Grandmother's recipe - she used to make this for me for breakfast or afternoon snack! The only edit I made to make it Cohen friendly is using a lot less oil and added mushrooms so you can enjoy your veg allowance together with the egg.

In the Philippines, this dish is called "Itlog na Swam"
Ingredients
Egg (Allowance)
Mushroom (Allowance)
Garlic
Water
Salt
Pepper
Spray oil
Instructions
Spray a saucepan with oil, and pan fry the garlic until it turns golden brown.

Add 1.5 cups of water and let it boil

Add the mushrooms

Crack the egg and drop it whole (without shells, obviously). Turn off the heat. The idea is to let the egg poach in the roasted garlic soup.

Add salt/pepper to taste.

Enjoy!

I think I am going to try this on the weekend - especially if I am still experiencing the courgette/zuchinni drought and can't have my favourite zuchinni hash brown for breakfast!

Hope you enjoyed it! Don't put too much water for the soup though - the more concentrated, the more flavorful it will be.
