I try to keep mine in the package it comes in .. leaving it in the fluid it's already in.. I'll place that in a air tight container & it seems to be OK for about 3 to 4 weeks. I use to store it dry but it went off really quickly.

hey all, I used to work in the deli at woolies and I can definitely say that the best way to keep it is in the liquid it comes in. This helps to keep it moist. We would got hrough it pretty quickly but it I do know that it can last for quite awhile.
My suggestion - if you go to a deli (woolies or coles in particular), ask them to put it in one of the salad containers and ask if they can put some of the brine in the container as well. I guarantee they will nearly always have a bucket load out the back that they will just pour down the sink when they run out of fetta. They don't put the brine in the window with it so it dries out a bit more too that way, so maybe even ask them for a piece from out the back (they will probably step into the cool room and tell someone else how much of a pain in the backside their customer is for making them ACTUALLY have to do work lol but i promise they won't spit in it or anything!)
This also means that you can have it weighed up and only get as much as you need for the week! Saves time and money
