Quick mid week meals.
Tofu (firm) Zucchini Mushies Fresh Asparagus Spring Onion Garlic Granules Lettuce (mixed or whatever your preference) Balsamic Vinegar I weigh my tofu with a little over allowance. I then sit it in a strainer to get as much water out as possible. Weigh it again to get to accurate allowance. You will usually lose about 2g of weight by draining the tofu. Marinate this in a little balsamic for about 20mins. Cook in non stick fry pan untill outside is coloured and the tofu is warmed through. Remove from pan. Add all veggies to the pan and season with salt and pepper. Cook until zuchini is tender and asparagus is tender but crisp. Put this on top of lettuce leaves and drizzle over a little more balsamic if you like. Serve up and enjoy. I alter the mix of veggies depending on what I feel like and whats left in the fridge. I also love this for lunch with salad. |

Thanks for that, Ronky. I've been thinking I really should buy come tofu for a change. That recipe sounds good.

Started 11/1/08. Lowest weight reached 63.8 kgs on 10/11/08 and 40 kgs down. Thank you Dr Cohen.
Back again to do it all over again, starting from exactly the same weight as last time. My health is not good and my doctor is predicting all sorts of nasty things if I don't lose weight.
