some more yummy recipes - mushroom sauce, perfect for veal, chicken, steak
MUSHROOM SAUCE / STEW:
This is a really good sauce to add to steak, veal or chicken. Tastes amazing - however, it you want a substantial sauce, does require most (if not all) of your vegetable quota. INGREDIENTS: brown onion (limited) garlic mushrooms (I prefer to have quite a few different types - flat, brown, oyster and shitake all mixed together) - DESTEM, and for flat and brown, get rid of the majority of the white bits for optimum flavour) mustard powder (small amount - perhaps 1/4 mustard powder) balsamic vinegar fresh rosemary sprig water WHAT TO DO: (1) brown off mushrooms and garlic (2) at the same time, cook your meat in the same pan until just undercooked (chicken, veal, steak) (3) take the meat off the heat (4) Add mushrooms to pan - suatee (5) add a small amount of water to the pan - add rosemary to pan - cover mushrooms, onions, rosemary and garlic with a bowl (so as to sweat it all) (6) after a while, take off the bowl - the mushrooms should all be soft (7) add some balsamic to the pan (about 1 tbsp - to taste), mustard powder (maybe some corriander powder if you are having chicken) ( add some more water - place the meat back in the pan and boil off the water (9) add salt and pepper to taste (10) voila - perfect hearty mushroom sauce!!! |
