Mushroom and Cheese tarts

preheat the oven to 180
brown mushrooms in a pan. Add thyme and garlic and
cover so that the mushrooms sweat and take on the
flavour. season to taste with salt and pepper
arrange the mushroom mixture over the saladas. top with
tomato. place cheese over the top (i never use the whole
portion - usually make a ricotta desert out of the
remaining portion)
bake for 5 mins - or until cheese melts
