Will you have cooking facilities in your villa? Will you have a fridge with a freezer box in it?
When we travel we often end up wanting to keep stuff cold and the simplest method is to freeze a bottle of water and put it in with your food in an insulated lunch bag (like the ones the kids use for school now instead of lunchboxes. Get one from the supermarket - nice and light ot pack and carry). One big icebrick that will keep cold for hours with no mess - and you can drink it when it thaws or just rotate two bottles through the freezer. It should fit even into the freezer of a bar fridge. We do it in our caravan.
Another thing you could do is pre-cook and freeze your chicken - I do that for work everyday and then you don't risk it getting warm - it will slowly defrost in your cooler bag and be ready to eat at lunchtime or dinnertime. If you can eat tinned tuna that is great and you should be able to get ones which don't need a tin opener. I have handbag sized digital scales I bought from Woolworths for under $20.
