Chicken: Roast Chicken with Individual Vegetable Parcels
NYF Cohen's Recipe Main Protein Chicken Recipe Name: Roast Chicken with Individual Vegetable Parcels Recipe Description This is my adaptation on the classic Sunday Night's roast chicken (which mind you, the family devoured) there's, not mine. Ingredients Chicken
Capsicum
Mushroom
Zucchini
Onion
Tomato
Fresh basil (torn)
Garlic granules
Balsamic Vinegar
Salt & Ground Black Pepper
Baby spinach (for serving) Instructions Prepare chicken for roasting (threw some garlic granules and salt & pepper onto it and placed it on some baking paper (on a tray) and into the oven on 160 degrees.
Meanwhile....cut vegetables quite chunky, mix altogether and lay them onto a piece of aluminium foil. Drizzle balamic vinegar over the top and fold sides in to form a parcel. Place this into the oven as well (note: no tray needed for this hence, less washing up). You want the veggies to be al dente. When you can smell the aroma of capsicum, its ready!
Slice chicken on the diagonal. Place baby spinach onto your plate. Carefully open vegetable parcel and place on top of the spinach and hey, presto, the veggies and balsamic vinegar have made you a sauce to pour over the top. Bonus..
