Curry chicken and apple on bed of rocket
rocket (or spinach, I prefer the rocket for its nuttier and spicier taste, or a mix) (allowance chicken breast (allowance) apple (allowance), de-cored and cut into 1/8 sprite zero curry powder, salt, pepper (for chicken) apple cider vinegar, 1 package sweetener, salt, pepper (for dressing) in a small sauce pan, heat apple wedges with sprite zero (about 20 mins until nice and soft and liquid absorbed. if liquid runs out before tha, add some more. In the meantime: cut chicken into small stripes, heat pan, little spray of olive oil, fry chicken with curry (and salt and pepper if you wish) until nicely golden, add some sprite zero and continue to cook. Take half of the salad and dress with dressing in a bowl. Take other half and put onto large plate (no dressing). Place apples and chicken pieces on top. Enjoy! Katrin |

Thanks K I had this for lunch today and it was one of the BIGGEST MEALS I have had while on Cohens could barely get through it, very nice and yummy :P
