Default Breakfast Ideas

Hi All,

I have been having issues with youghart. I get really bad eczema and youghart flares it up beyond repair. I thought I would give it a go one last time but no. So I have been looking at different breakfast ideas and thought I would share.

Breakfast "muffins"
riccotta
mozzerella
mushies
asparagus
grated zucchini
salt and papper

Put aside some mozzerella combine all ingredients and press into a lined muffin tin. Sprinkle half a crushed cracker biscuit and top with left over mozzerella. Bake at 180 for about 20mins or until top is brown.

This is great to take to work and heat up. Very easy. I have it with the remaing half cracker biscuit plus another if Im feeling hungry.

I have made this today with cottage cheese for the rest of the week so I will let you know how they taste.

If anyone has any other breakfast ideas that dont involve youghart please share.

Hi , I have a boiled egg with fresh tomato every morning, I love it. If I know Im going to be short of time in the morning I boil 2 the previous day

I like the boiled egg with fresh tomato as well...

Other things i have (cos i am not really a yoghurt fan) are:

- Scrambled egg with tomato, onion and mushroom.

- "Fried egg on toast" - fried egg (using a good non-stick pan and of the oil spray) on cracker and i have that with my allowance of chopped tomato or cucumber to make sure i get the veg in.

- "Cheese on toast" - ricotta, mozzarella, cracker. Spread cracker with the ricotta and top with some grated mozza and stick under the grill for a few minutes. (make sure that the cracker is completely covered with cheese so it doesnt burn). You can also put a bit of tomato on it and sprinkle with oregano if you want to jazz it up a bit.

I also love grating zuccini in a beaten egg with half a shell of water & cracked black pepper, frying it like an omlette or pancake, which ever you prefer to imagine it as

A lightly fried egg with sliced fried tomato, black pepper & mayo allowance on the egg is quite yummy.. and my daughter loves making her boiled egg into curried egg.. a little sweetener, curry powder, pepper & mayo all smooshed together & served on a bed of lettuce.. She also loves fried egg served on saladas which is pretty yummo too.

PS.. remember Ronky we cant have cheese more than 3 times a week (in case you forgot )

Thanks ladies. I will have to try some of these suggestions.

Thanks Faithy I was concerned about the too much cheese thing but the clinic said it shoudl be fine since I wont be eating any youghart so long as I keep it light and only have it once a day. I have also completely sacrificed feta which is going to taste fantastic when I have it again!!

Hi Ronky
hubby did this one for me - soak a rice cake in a seasoned whisked egg (have to let it sit for a while in the fridge to soak up) pan fry and top with mushroom and spinich - or veg of choice. My favourite is a rice cake topped with seasoned tomato then mozzarella and sprinkled with capsicum under the grill. The kids call this my breakfast pizza!! Good luck

That's interesting Ronky & I have to admit that surprises me.. the reason we shouldn't have cheese more than 3 times a week is because of the high salt content in cheese.. which yoghurt doesn't have..

Many people have tried having cheese more often than mentioned in their programs & at first hasn't had too much of an impact, but later on it does.. it can slow down weight loss & can cause fluid retention..

I would be more inclined to follow what your program says.. stick to cheese no more than 3 times per week & the other mornings I would go with the egg option..

Anyway, I hope you have found some interesting ideas.. doesn't hurt to play around a little to make things more interesting..

I would also have to agree with Faithy. Our clinic up here in Singapore also says only 3x per week as well, with Feta only 1x (which does not mean 3 mozz & 1 feta) It means cheese in what ever form or fashion only 3 times per week.

Hi,
This is proberly a rehashed version of others receipes
I used meal 1 x 4
4 eggs
1 grated zuchi, squeeze excess moisture out before weighing
3 Tb chopped red onion
2 big handfulls chopped baby spinach
4 chopped mushrooms
1/2 tomatoe chopped all weighed for allow x 4
2 tsp whole egg mayo
salt pepper,
chopped dill & garlic
Mix all together spray pan I used the shallow muffing tins, this made 16, so 4 for each meal.
I froze them and heated them up for breakie, great when in a hurry.

Some of my favourite Breakfast Ideas:

-Soft Boiled Egg served with blanched asparagus "toast" soldiers

-Fry asparagus spears (cut in half lengthways) and a few slices of mushroom with garlic powder, salt and pepper. Set aside. Wilt some baby spinach in the same pan. Place spinach then asparagus and mushrooms on plate and top with a freshly poached egg and some cracked black pepper. Enjoy with an Expresso.

tried the breakfast muffins and forgot to line the muffin tin with the grease proof paper.... this is a must..... still trying to soak of the mess...doh

Ive had FAITHY'S apple and zucchini muffins the past few mornings, i was getting a bit over yoghurt, and they are really YUM !!! I cook them in a mini muffin tray, the recipe makes about 9.........

I have a fried egg with tomato & onion (fried) or fried mushroom, omelette with fried mushroom or steamed spinach. Occassionally I will have a boiled egg with lettuce & tomato, either plain or curried

Default Anyone for Eggs Benedict ?

Most mornings I have eggs benedict - Cohens style.

Saladas
egg
asparagus - thin ones best - (allowance)
mushrooms - try shitake and swiss brown (allowance)
baby spinach - allowance
wild rocket - allowance
salt and pepper to taste and allowance

I use 2 saladas - although you could use just one if you wanted to.

Then I put on top asparagus and finely sliced mushroom (shitake & swiss brown as delicious) that have been heated for about 30 - 40 secs in the microwave with a bit of balsamic vinegar.

then I put leafy greens on top of that - usually rocket and baby spinach.

Pile it up beautifully like the chefs in restaurants do.

then for the finishing piece - one poached egg done softly.

The egg yolk becomes the 'sauce'
Very Delish.

I think I could even serve this for guests.

Oooh, your eggs benedict idea sounds great! Will give this a go at the week-end when I'm not dashing out of the house.

My usual brekkie is yoghurt and sometimes I break my crackers in to get a bit of a crunch.

The egg dish sounds great Shanara, I have eggs for brekky probably 4 or 5 times a week so it would be nice to do something different with them! I will try that over the weekend, thanks!

I do a mock cheese 'omelet' sans eggs of course a couple of times a week.

I cut up my allowance of vegies, I usually stick with tomato and onion, or maybe mushies, but anything you had would work. Lightly spray a non stick pan and cook the vegies, then when they are almost done I put in my allowance of mozzarella cheese. As it melts and browns spread it a little over the pan so you have a nice circle of cheese, then pile the vegies on top. When you serve, slide it out carefully onto a plate and then flip one side over the other... delicious! Looks just like an omelet and tastes quite decadent and naughty. Plus a bit more of the oil from the cheese is left behind in the pan too, so even better!

This is something I used to eat as a quick & easy supper Pre-Cohens, and can still enjoy now....

Steam asparagus spears [but leave some 'crunch' to them]
Poach I x egg
- arrange the asparagus on a plate and top with the soft poached egg, the runny yolk will act as a sauce to drizzle all over the greens, yummo!

* I've done this as a starter for dinner parties but have given the guests shavings of parmesan
