Mango Sauce
I just made a magnificent mango sauce with an "over rip" mango, dont you hate it when you buy them and 2 days later they are soft, what I did was blend the mango with a small amount of sprite zero, heated it in the microwave and poured it over my grilled chicken and mushrooms, was devine. Also am going to try mango blended with sprite zero and add it to my yogurt for breakfast... Cheers Barb ~! |

Hi Time4Me,
I had an over ripe mango, so i blended it with some sprite zero and froze it, it makes a really nice dessert, really good in this hot weather. Cheers Purple Lady |

Hey, that sounds great T4M.....I tried to make a mango sauce the other day to add to my salad but it was an utter disaster --YUKKY!!!(can't remember what I did) but the diet sprite sounds like a great idea, I will definately give it a go!!! Mangoes are just the best arn't they!!!!! I have enjoyed being on Cohens so much since mangoes have come into season, I wish they were available all year round.

Freeze the Mangoes !!

I have brought two trays of mangoes and cut them up. Then bagged them in 150gm lots. I have a huge amount in freezer. I will have mangoes through the winter. My consultant says perfectly fine to do this - she has done it herself. I think they thaw better in the refridgerator than outside - slower thaw better results. Shanara

Freezing Mangoes
Yes Shanara I agree. I am going to do the same. Our Mango Man from Tea Tree (just up the road) is back in town (Yipee! ) so I am going to buy a couple of boxes and cut up bag and freeze them. I did this last year and used them this year and they were just as nice as when I got them.

I have been making a mangoe smoothie for brekky most mornings....I blend mangoe + yoghurt + physillum husks (keeps me regular!!!!) + a good splash of sprite zero sometimes a sprinkle of cinnamon in there aswell. YUMMO!!!!!

I freeze mango in 150g bags. Then for breakfast, chop up a bag of still frozen mango and put it in the blender with my yoghurt and YUMMO!!! I also sometimes put fresh mango in the blender with yoghurt and it gives a mousse sort of texture to the youghurt, with the devine mango flavour! I am off tomday in search of more mangoes (at a reasonable price) to freeze for winter. I LOVE SUMMER!!
