Chicken, corriander and black peppercorns
Since I haven't started yet I don't know if this is going to work, but I have a great recipe for chicken. It's actually out of Stephanie's cookbook but I am not too sure if blackpepper corns are allowed or not but here goes. Chicken 3 gloves of garlic (is fresh allowed), or if not garlic granules Corriander lime juice and water (small amount ) black peppercorns (maybe 1 teaspoon) Grind the garlic, corriander, lime juice and black peppercorns up so it looks almost paste like and slightly runny. Marinade the chicken in the paste up to 24hrs if possible and throw on the bbq when done I have not put allowance's in as I am not too sure what they are, but when it comes to the lime juice just a small amount maybe a tablespoon, if you aren't allowed that much then just add some water. You could probably marinade it and then throw it into freezer bags and cook when needed. I cook this all the time when we have bbq's and thought that it may be good. Welcome to the program! Don't forget that any juices - lime, lemon etc come out of your daily fruit allowance. If you are allowed 3 fruit then even a small amount of lime juice counts as '1 fruit', so perhaps you can use the rest of the lime for something else that day The same applies with any fresh vegetable, it is part of that meal's allowance. If you use fresh parsley, that has to be weighed in with that meal, ditto coriander, garlic etc Dried spices or, say, garlic powder, are to be used 'sparingly' each day. My program did not have fresh garlic, although apparently more recent programs allow fresh garlic as a vegetable, same goes for fresh ginger and other seasonings. My program expressly prohibited fresh ginger, but I noticed it included in a recipe in Cohen's Newsletter recently, so perhaps it is included in programs now. Someone recently posted that they used lemon thyme instead of lemon juice in recipes to preserve their fruit allowance, but I don't know what herb could be used as a substitute for lime juice While on the program I used salt and ground, fresh pepper as the main seasoning, even using black pepper on oranges which is surprisingly nice!
