Protein Mini Muffins
1/2 cup protein powder (I use carb free unflavored version) 1/4 teaspoon salt 1 teaspoon baking powder 1/4 cup sweetener 1 egg 2-3 tablespoons natural fat free yogurt 1/2 cup liquid (I used slightly less, and used sprite zero) 1-2 tablespoons flavoring essence (experiment and enjoy!) Mix dry ingredients together. Add wet ingredients and mix well. Let stand for 10 minutes. Spray mini muffin tins (or use silicon), and bake at 180 for about 14 minutes (until springs back when you touch the top). Makes 24 mini muffins. Makes a delicious and nutritious protein snack! Ground flaxseed (also called Linseed) is low in carbs, and high in protein and fibre and omega fats that we need. You can get Flaxseed meal mixed with sunflower and almond which I suppose would work just as well (LSA meal) |

thanks Tahli, I can use this when I get back to my goal weight. And thanks for saying about magnesium for BM's - didnt know that, and I'll give it a try
