Roast tomato and fresh basil muffins


Recipe Description
I find that this is really easy and a quick breakfast especially when I'm at work. No mess no fuss. 
Ingredients:
Tomato
Basil
egg
1 cracker
small amount vegies 
Preparation Steps:
 
Level of Difficulty:

Time Needed:
 
Serves:
makes 5-8 mini muffins 
Instructions:
. Use 3 quaters of your veg allow in tomato and slice into 4 wedges.
. Place in oven on 220c until roasted (10-15 mins)
. Reduce cracker to breadcrumbs in a mortar and pestle.
. Chop up roast tomato and add egg, cracker and make up veg with the rest of veg allow chopped up very small.
.Chop us basil finely and add to mix.
. Combine all ingredients thoroughly.
. Divide mixture into mini muffin pans or I use mini silicone muffin moulds.
. Bake 200c for 7-10mins


I make these ahead the day before and then reheat them in the microwave the next morning. The roasted tomato goes very savoury.

Guys just remember that tomato is limited to 1/2 a tomato per meal.
