Thumbs up Mini Roast

Mini Roast


Recipe Description
Eye Fillet Roast stuffed with herb and blended veges
This is absolutley delicious 
Ingredients:
Eye filet Roast
Herbs
Vege's (i used spinach, mushroom, onions, tomato and squash) 
Preparation Steps:
 
Level of Difficulty:
Easy 
Time Needed:
 
Serves:
Instructions:
Pre-heat oven to 180 degrees
Cut a deep pocket into weighed mini roast
put in Garlic and blended vege's
Wrap in foil and Roast for about 40 mins (depending on weight)
Unwrap and cook for a further 10 minutes on about 210 degree's

Just has this one for luch warmed up from it was even better the next day!!!! The herbs/garlic had really infused the meat

This sounds really good. Just make sure if they are fresh herbs they are weighed with your veges. If dried, max of one teaspoon per day total

you will also need to remember to subtract the cooked weight from the raw weight and work out what the % of loss was and then subtract that from the peice you are going to eat, otherwise you will be having too much protein and throw everything out for the day.

When I bought the roast it only weighed 300 grams. So I split it into 2 meals and the excess meat I froze and used as stir fry meat. I still cooked them both together but each roast meat piece had its own vege allowance in it. I am not good with maths...or taking the risk that my calculations would be out, so this is why I did it as two seperate meals cooked at the same time.

Hiya! This was a great meal - I made it for dinner last night and am having leftovers for the next few days. I ended up getting a small beef roast and stuffed it with a "minced" stuffing (I put the stuffing ingredients in a food processor) - baby spinach, mushrooms, squash, onion and lots of herbs. It was a bit difficult to get the protein/vege mix per meal right but it worked out great.

Thanks for adding this to the Cohen's meal ideas
