Default Baked Ricotta ?

I had the local Cohen office mention that baked ricotta is an ideal Cohen's cheese meal. I've just had a quick search and the ingredients needed to make baked ricotta are as follows:

# 500 gm (1 lb) fresh ricotta cheese, drained*
# 1 egg
# 1 clove garlic, chopped
# ¼ cup fresh herbs, try basil, parsley or oregano
# 60 ml (¼ cup) olive oil
# Sea salt
# Freshly ground black pepper

Doesn't look too Cohen friendly to me. Does anyone use baked ricotta for their cheese meal ? Maybe the recipe I found isn't typical.

Um, that recipe couldn't be Cohen friendly, aside from the fact that it's far too much oil, but I don't know of a plan that lets you combine proteins (egg and cheese).

I believe baked ricotta is simply that, ricotta that's been baked. No additives. Not 100% sure, but I'll have a look when I get home tomorrow (I'm on dialup here and not surfing the net for anyone!)

Default Baked Ricotta ?

Found a scrumptious ricotta, usually I buy the low fat but grabbed this one by accident thinking it was another variety that I've bought only to find it was full ricotta and so smooth. I think it was Panelotta (?sp), was assured by my consultant that it was okay so will keep my eye open for it again.

Default Baked Ricotta ?

Hi Baloo,

I have baked ricotta in the form of a low-fat cheesecake and in cannelloni and it is very yummy. :twisted: I have seen here in Woolworths you can buy baked ricotta ready to eat in a round block in the continental section but I don't know how multicultural your shops are in Singapore. The Cohen's website has some recipes using ricotta.

With the receipe you posted, you could leave out the egg and olive oil and I think it would bake quite well. Perhaps you could try with half of the quantity to give it a try. It tends to shrink a little when baked. I would bake it in a little round container lined with maybe some baking paper. You could give it a spray of olive oil spray on the top for flavour. Let us know how it is if you are going to try it. Might try it myself too.

Default Baked Ricotta ?

Thanks guys,

I know a couple of places I can buy baked ricotta here in Singers. My concern was if the web recipes to make your own include oil, egg etc etc, I'm wondering if the store bought baked ricotta has these ingredients as well.

Guess I'll have to read the labels of what's available to me here when I find them.
