Default Tuna Salad Muffins

Perfect protein-filled snack! Or as a replacement to crackers with your main meals.

Ingredients:

1 1/2 cups all-purpose flour - I substituted it with whole wheat flour
1 tablespoon sugar - I used 3 packets of Splenda
2 teaspoons baking powder
1/2 teaspoon salt - I didn't put enough! Darn!
1 (9 ounce) can tuna packed in water, drained
1/2 cup plain nonfat yogurt - I used 1 cup of my homemade yogurt, which by the way turned out great! It's a little tart but that's how I like it. I sweeten my yogurt with fruit anyway.
1/2 cup chopped green onion - I used 1/2 red, 1/2 yellow
1/4 cup chopped green olives - Replaced with celery + 1/4 cup bell pepper
1 tablespoon chopped garlic
1 egg
3/4 cup skim milk - skipped this. the extra yogurt made up for it.
1/3 cup vegetable oil - used olive oil.

Directions
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Lightly grease muffin tins.
  3. In a medium bowl, stir together flour, sugar, baking powder, and salt. Set aside.
  4. Into a separate bowl, flake tuna; then stir in yogurt, green onion, olives, and garlic. Set aside.
  5. In a small bowl, whisk together egg and oil (and milk if you're using it).
  6. Stir tuna mixture into flour mixture. Gently stir egg/oil mixture into flour mixture. Spoon tuna salad into the wells of muffin tins.
  7. Bake in a preheated oven for 20 to 25 minutes.
