Mouthwatering Fish Cooked in Foil
Recipe Description
My favourite way to cook fish! In fact the ONLY way I cook it, cos it is just too dam delicious to want to have it any other way.

The flavours are really intense and it is so filling!
Ingredients
Fresh Fish (allowance) - I used 105g of Snapper
Onions (1/4-1/2 of your allowance)
1/2 Tomato (diced OR sliced try and retain as much of the juice as possible)
Chives (1/2 tsp)
Garlic Granules (1/2 tsp)
1/2 freshly squeezed lemon juice
Cracked pepper
Tinfoil
Instructions
1) Lay out enough tinfoil to fit your fish in flat (i would suggest two layers of tinfoil on top of each other to avoid juice spillage whilst it cooks)
2) Dice up tomato, onion
3) Lay your fish down, and put your tomato and onion in an around the fish. Make sure you get that tomato juice in there too! Try to spread it around so the flavours really cook through it. You can just leave it on top if you like, but i would suggest tucking it in underneath etc.
4) Along the top of the fish, sprinkle out (as evenly as you can) your chives and garlic granules.
5) Squeeze your freshly cut lemon up and down the fish once again so that the flavours have been evenly spread.
6) Bring the two longest sides of foil together and create a fold above the fish. So you end up with a folded seam along the middle of the fish.
7) Then fold each end inwards, almost like you have created a wee bag.
8 You don't want to fold the foil over the fish so that there isn't any room for it to breath whilst cooking. You want a nice convenient wee bag to cook in.
9) Once thats all tidied up, put it inside a tray, or a dish and cook for 35-40minutes 180 degrees Celsius.
10) When done, open the seam but be careful you don't get burned, and using a fishslice or a large spoon you can scoop the fish out ready to serve. Don't forget about the juicy goodness, scooping some of it and putting across your fish when served works a treat!
11) Serve with your choice of veges

Hey Gypsymadonna Thank you for the recipe I do love fish I might even say more than meat I can live off of fish alone but some nice veg will go with this dish I was thinking maybe even some cauliflower rice would go nicely with all the juices
