Default Edengirl's Cohen-style recipes

Baked field mushrooms

Remove stem from medium sized mushroom, chop stem finely
add diced tomato
finely chopped continental parsley, basil & thyme
garlic clove
add ricotta and combine well
fill mushrooms and bake until browned

Serve mushrooms warm, with mixed salad leaves dressed with balsamic vinegar

**NOTE: if you like you mushrooms softer, then microwave [for a minute at the most] them before you fill with them with ricotta

Curried egg

mash cooled boiled egg
combine with curry powder, finely diced celery, sliced shallot, continental parsley & fat free mayonaise

Serve with crispbread square/s and lettuce leaves

**this is an easy lunch to take to work, that you can make the night before and is very filling!

Poached stone fruit

I am poaching my stone fruit now whilst it is in plentiful supply, in the hope that I will still have plenty of fruit options when Autumn & Winter arrive!

Place whole stone fruit in a large deep saucepan, cover with cold water [add spices] and gradually bring to a low boil, simmer very gently for about 8 minutes then remove pan from heat and allow fruit to cool in the poaching liquid. Refrigerate until required.
I have used the following combinations:
#Peaches with star anise, peppercorns & cinnamon
#Nectarines with ginger & kaffir lime leaves
#Apricots with cardamon and peppercorns
#Apricots with cinnamon

* Note if storing for a length of time bottle in sterilised jars when fruit/liquid are still hot and seal tightly.

My favourite breakfast eggs

Poach one egg, in slightly simmering water with a tablespoon of vinegar for best results
Steamed asparagus [I microwave mine in a plastic rice-cooker for 1 minute]

Place steamed asparagus on centre of a warmed plate and top with egg, cut egg slightly to allow yolk to run over the green spears. Season with salt and cracked pepper serve pronto!

BBQ'd prawns with mango salsa

Salsa-
Combine finely diced onion [1/2 allowance], diced mango, chilli and coriander leaves

Prawns-
In a bowl combine pureed onion [1/2 allowance] with coriander stems finely chopped and garlic ..marinate prawns in this mixture [making sure that the bowl is well covered in cling-film when you refrigerate as the onion will permiate everything in the fridge!]

BBQ prawns on low heat and serve with mango salsa and salad leaves

Arrrghh! I never thought to remove the stems from the mushrooms to get more yumminess in for my grams!! Bit like the silverbeet....too much weight in the stalks, from now on I am buying spinach leaves!!

Warm zucchini salad

Cut zucchini on the diagonal into rounds, grill on the BBQ until well marked
To serve- arrange warm zucchini slices on a plate, and scatter with chopped mint leaves crumbled feta, lemon zest and plenty of cracked pepper.

*If you have already had your feta allowance for the week, then my other favourite is to marinate a chicken breast [that I have flattened slightly] with garlic, cracked pepper and thyme leaves.
BBQ chicken fillet until well marked, allow to rest for a few minutes then cut across the grain and serve on top of the zucchini

NOTE: this salad is lovely served warm or cold

Default my favourite summer salad

Chicken coleslaw salad
  • Chargrill chicken breast fillet, seasoned with S & P

In a salad bowl combine the following:
  • cabbage, very finely sliced [combination of red and wombok looks good!]
  • shallots, sliced on diagonal
  • celery, very thiny on diagonal
  • mint and flat leaf parsley, chopped
  • apple, diced
  • combine a small amount of fresh dill leaves with low fat mayonaise, and thin down with some water to extend the quantity and combine well with the salad items to coat
  • place salad mixture in a heaped mound in the centre of plate and top with warm char-grilled chicken and a few more continental parsley leaves
....enjoy!

Default SOUP

Now that it is cooling off in the evening this soup is ideal, ...it makes me feel full afterwards but without the heavy & bloated feeling that most soups usually give you!


Fish soup
  • Sweat-off some onion, celery & garlic [I always use the leaves of celery too] until the onion is opaque
  • cover with water & add some diced tomato and simmer until vegetables are soft
  • add Snapper [cut into small portions]to the broth and on a very, very low simmer, cook for approx. 15-20mins
Serve in a large bowl with some additional small celery leaves & continental parsley leaves

....enjoy!

Default Breakfast eggs..

Mexican eggs [....without the beans ]
  • saute some onion and garlic in a frypan until opaque
  • add capsicum and cook until it softens & starts to colour a little
  • add diced tomato, corinder stems/roots, balsamic vinegar [add some chopped chilli if you like a bit of heat]
  • continue to cook for a couple of minutes
  • season to taste with salt and pepper, if your tomatoes are too acidic add 1 sweetner
  • make some space in the centre of the pan, crack one egg into the circle space and cook to your liking.
  • serve with crispbreads and a sprinkle of corinader leaves
....yummo!

it is almost the end of the stone fruit season so making the most of the fruit in this lovely salad..

Chargrilled Chicken & Stonefruit salad
  • BBQ chicken breast fillet until well marked, set aside for a few minutes to rest..then slice diagonally
  • Char-grill asparagus
  • Arrange on a large plate some rocket leaves and finely sliced red onion, add the warm asparagus & drizzle with balsamic vinegar
  • Cut peach or nectarine into segments, add to salad
  • Place warm chicken slices on top of the salad and scatter with a few mints leaves and season with S & P
...enjoy!

Roasted capsicum with beef
  • Cut capsicum into half and remove seeds, bake for 15mins in hot oven
  • Saute onion until soft, add minced garlic
  • Pan fry beef mince [or strips] once almost cooked, add shredded cabbage to pan [or spinach leaves, depending on what you have at-hand!]
  • add diced tomato to beef mixture, cook until well combined
  • season well, add torn basil leaves
  • scoop mixture into capsicum and continue to bake for another 10mins
  • serve on a bed of rocket leaves
...enjoy!

note; Nice also as a vege option with little cubes of mozzarella added to the vegetables before you pop it in the oven

Crab salad



We went to the Sydney Fish Markets on the weekend, and bought some lovely crab meat....divine!

I've also seen it in cans in Woolies, and it's a nice change from tuna salad, the canned variety isn't too bad..still lovely sweet meat!
  • in a bowl combine the following-
  • apple, sliced into fine wedges
  • celery, cut into fine diagonal
  • Continental parsley leaves
  • rocket leaves
  • spanish onion, finely sliced
  • crab meat
Thin out some mayonaise with cold water until it is fairly runny, pour over salad items and toss well

Transfer to serving plate and add a couple more parsley leaves for a garnish

Hi Edengirl, I have only just looked at this thread and I think some of those recipes are great. I am currently away from home but I will be printing these out and adding them to my collection and I will let you know how they go. Can't wait.

I too am trying to avoid red meat as much as possible because I do feel that it hinders the weight losses.

I love most prawn recipes - a constant favourite of mine is the garlic prawns (From memory I think it is in the recipe book - if you want and can't find it, I will let you know where after Easter when I get home).

We have fresh crab that we catch ourselves here and I just love it fresh in the shell but I may try your recipe as it sounds great.

Thanks again and I am sure there are others out there - they are probably too busy trying these recipes to comment . LOL
