Turning crackers and cheese with a tasteless saled into a great meal


Recipe Description
Crisp Bread
Allocation of Cheese
Allocation of vegies including
- tomato
- onion
- shallots
- garlic
- finely diced green pepper
- chilli (small red spicy ones)
- herbs of choice / seasoning of choice 
Ingredients:
 
Preparation Steps:
Get out the wok and measure up the above ingredients times to whatever portion you want to spread it over. Basically your are sautéing it until tender and then cooling it. Remeasure it into portions and separate.

Instructions:
Get 2 crisp bread, put on the meal allowance and then the cheese allowance on top.

Bake under the grill until the cheese melts and you have yourself a yummy lunch and thats easy to prepare. If you want to kick it up a notch throw over a splash of tobasco.

I do a similar dish which I call a melt.
I slice and grill a mushroom and zucchini then slice some tomato and onion. I layer sliced mozzarella and place onto my crackers with a sprinkling of dried herbs and pepper then pop the tomato,onion,zucchini and mushrooms ending with another layer of cheese and herbs. Grill until cheese has melted..yummo!!

Or I sometimes layer grilled veg and melt cheese on top, thereby saving the crackers for later.
