Default Stuffed Chicken Parcels

Stuffed Chicken Parcels


Recipe Description
Chicken stuffed with garlic and peppers 
Ingredients:
Chicken breast (allowance)
Capsicum
garlic
onion
paprika
chilli
baby spinach
1 crushed cracker
salad ingredients to make up your allowance 
Preparation Steps:
Preheat oven 180 degrees 
Level of Difficulty:
Medium 
Time Needed:
10 minutes preparation, 30 minutes baking 
Serves:
Instructions:
Flatten the chicken breast between 2 pieces of baking paper. Place onto a sheet of baking paper on a small baking tray.

Combine 1 tsp finely chopped onion, 1/2 clove garlic finely chopped, 20g capsicum finely chopped, 1/2 tsp paprika, 1/4 tsp chiili flakes and stir well.

Place your baking tray with the chicken on it onto your scales then turn it on so that you get a reading of zero. Pile the filling onto the centre then add enough baby spinach leaves to get 30g of veges. Add 1 crushed cracker.

Fold the chicken over the filling, then fold the paper securely over the chicken and make sure the opening is at the top of the parcel. Bake for 25-30minutes.

Serve hot or cold with a salad made from your remaining vege allowance. When cold the juices make a great sauce for your salad and the flavours seem to mature.

I made five times the recipe this evening and divided it into five parcels. I marked the correct weights on two of the pieces of paper for me - one for dinner and one for work.

I placed cheese slices onto the three remaining parcels before wrapping them up for my hubbie and kids. The kids weren't thrilled with this as they arent keen on onions but I saw hubbie licking his plate - literally!

By the time I came to eat this during the night shift, the sauce from the chicken had dripped all through the salad and it was yummy.

I would imagine that the uncooked chicken parcels would freeze well and would then just need to be defrosted and cooked
